Overview

Hola Coastal Mexico

Learn to prepare the coastal cuisine of Oaxaca on this week-long itinerary with one of our favorite chefs! You will learn to choose fresh seafood from the local fishermen delivering the fresh catch of the day, but that is not all! Enjoy whale watching, chill out by the pool, relax on the beach, or to walk into Puerto Escondido.


Trip Details

Your 4 hands-on cooking lessons will be with Chef Ana, a young but famous proponent of her native Mexican cuisine. While Chef Ana is most often found in her hometown of Tepoztlan, she loves heading to the coast to share another aspect of Mexican cuisine. In the cooking classes, Chef Ana will incorporate the traditional dishes of her family with the coastal cuisine of Oaxaca. While the menu will vary on what’s in season – including the fresh fish catch of the day – you can be sure there will be a variety of seafood dishes.

Itinerary

Sample itinerary, subject to some modification based on the specific week.

Day One

  • Arrival transfer from Puerto Escondido airport (PXM) – there are around flights per day from Mexico City.
  • Settle in to your breathtaking seaside accommodation. Snacks will be available when you arrive.
  • Tonight Chef Ana will a wonderful dinner, all made with the freshest ingredients.
  • Overnight.

Day Two

  • This morning a light breakfast and an early start.
  • In the morning, depart early (6am) for the Bahia Principal to see the fishermen return with their catch. Ana will teach you how to select the best fish.
  • Next, off to the main market to select more ingredients. Traditional lunch in town (cost paid locally).
  • Cooking class this afternoon around 3 pm. Possible dishes are fresh tuna tostadas, Amarillito with shrimp, and Lechilla.
  • Dinner is served around 8 pm.
  • Overnight.

Day Three

  • Enjoy a wonderful breakfast featuring a variety of traditional dishes (with a different main dish each day), along with fruit, yogurt, granola, jams, as well as coffee, and tea.
  • At 11 am start your class, which might feature classic Oaxacan dishes such as Manchamanteles with pork, Chilles Rellenos with fish, and a mango dessert.
  • Lunch to follow.
  • Afternoon free to relax, with dinner at 8:00 pm.
  • Overnight.

Day Four

  • Breakfast.
  • Today’s double cooking session will start at 11 am. Possible dishes are Aguachile Chileajo, Oaxacan ceviche, and Escabeche de Pescado, as well as Tapistes de Pascado, rice with plantains, nopal salad, and corn cake.
  • Lunch to follow.
  • Afternoon excursion to shop at a local artesan’s market, and then to see the release of baby sea turtles.
  • Dinner (based on the morning’s lesson) will be served around 8pm.
  • Overnight.

Day Five

  • Breakfast. Depart for the coastal area with a visit of the Chacahua Mangrove and National Reserve. Enjoy a boat ride to see the mangrove tunnels and many varieties of birds, fish, and other wildlife.
  • End at one of Mexico’s hidden beaches, Chacahua Barch. Enjoy the rest of the day at the beach.
  • Overnight.

Day Six

  • Breakfast.
  • Cooking class at 11 am: tamale day with fresh water mussel tamales, rice with chepil, avocado soup, and dessert tamales. You will also start preparation of Ana’s famous mole (served during your farewell dinner.)
  • Lunch to follow.
  • Free afternoon, and light dinner at the residence at 8 pm.

Day Seven

  • Breakfast.
  • As the last full day, enjoy a rustic beach day at Aguas Blancas beach. Enjoy fresh oysters, lobster, and fish for lunch while lounging in  the sun. (Lunch paid locally. If you would prefer, alternate activities such as fishing, surfing, or shopping, can be arranged.)
  • In the afternoon visit a local Mezcal producer with tasting.
  • A farewell dinner will be served at 8 pm.
  • Overnight.

Day Eight

  • Following breakfast, depart for the airport.

  • Arrival transfers from Puerto Escondido (PXM) airport. (There are a few flights each Saturday from Mexico City, allowing for ample connection times, but you may wish to take an extra night in Mexico City in order to take an earlier flight to Puerto Escondido).
  • Departure transfer to Puerto Escondido airport
