Il Falconiere was for many generations the Baracchi family house before it was converted into a luxury hotel. Cortona is the famed setting of Francis Mayes’ book Under the Tuscan Sun (and the film based on it starring Diane Lane), and the town is just as charming and picturesque as you would want for your Italy cooking vacation. Cortona was an Etruscan city in ancient times, but it now is part of the region of Tuscany. Its ancient roots and its location near the border of Tuscany and neighboring Umbria make it a fascinating town to explore during our Cortona cooking classes and Italian wine tours.

Our food vacations near Cortona, Italy include plenty of exploring of this beautiful town, but also hands-on Il Falconiere cooking classes. Chef Silvia Baracchi has turned the estate’s restaurant into a world-class Michelin-star dining destination, and she or her chefs will lead the culinary classes during our Tuscany tour. Chef Silvia’s pride in her work is manifest in every bite as she teaches you the art of Italian cuisine.

You will also pay a visit to the Baracchi winery, complete with a guided wine tasting of their wonderful wines accompanied by delicious dishes. What could be more special than drinking a glass of fine Tuscan wine while gazing out over the vineyards that produced it?

Day One

  • Welcome cocktail around 8:00 pm with Silvia Baracchi, your host for your Tuscany cooking vacation and Tuscany wine tour.
  • The aperitif will be followed by a delicious dinner in the hotel’s famed Michelin-star restaurant.

  • After breakfast, your first cooking lesson of your Tuscany cooking vacation, perhaps based on Frances Mayes’s famous stay in Tuscany immortalized in the book and movie Under the Tuscan Sun. Your menu might include: eggplant roll with prosciutto and mozzarella, pici pasta with tomatoes and herbs, beef loin with shallots and balsamic, and poached pear with cheese and sabayon.
  • Lunch to follow accompanied by great Tuscan wines.
  • Afternoon at leisure. You can relax in the Thesan Spa (which has a Sauna, Turkish bath, Hydro massage pool, and Chromo Emotional shower) and perhaps schedule a wine therapy relaxation massage .
  • In the evening, take a guided walk around Baracchi’s vineyards and winery on a Tuscany wine tour and learn about the process of wine making, from the vineyard to the bottle.
  • A wine tasting will follow with dinner at the restaurant.

  • After breakfast  your Tuscany culinary vacation continues when you depart for a visit to a local farm, where you will see sheep, chickens, rabbits, geese, and other animals. You will also get the milk for your cheese-making class, and will enjoy a light lunch featuring local products.
  • This afternoon enjoy a visit of Montalcino and Montepulciano. You will love the stunning landscape of the Val d’Orcia, and will visit outstanding wineries on our Tuscany wine tours to taste the famed Rosso di Montepulciano and Brunello wines.
  • Dinner back at the restaurant.

Pasta dish in TuscanyDay Five

  • Breakfast, then your Tuscany culinary vacation continues with a visit of amazing little Tuscan towns, including Asciano, which is home to the Tuscan white truffle. Depending on the season, you might visit truffle hunters, or might enjoy a walk through the woods.
  • Lunch out during the excursion based on local food specialties.
  • Back at the Relais, enjoy the next cooking lesson of your cooking in Tuscany tour, based on Etruscan cuisine. Your menu might include traditional wild herb pie with parmesan fondue, “gnudi” pasta with ricotta cheese, local lamb in a crust of Tuscan bread, sautéed greens, and berry cake with mascarpone cheese mousse.
  • Dinner to follow.

Cooking under the Tuscan SunDay Six

  • Breakfast and continue your Italy food tour with a visit to a local vegetable producer close to the relais, where you will get some vegetables for your last class.
  • This afternoon, transfer to the nearby Locanda del Molino in Cortona for the last cooking class of your Tuscany cooking vacation.

Classes & Instructors

Four of your cooking classes will teach you traditional Tuscan recipes with Chef-Owner Silvia Baracchi, or one of the other Bottega Baracchi restaurant chefs. Your fifth class will be a special cheese-making class! This is the Il Falconiere cooking school experience for students of all levels, and the kitchen is located in a charming house where you can relax while getting to know the cuisine of the region. This place was the most fantastic place we have every visited. The views were breath taking, the service was over the top and the cooking classes were totally enjoyable. We enjoyed 3 fabulous days at Il Falconiere. The estate is beautiful . Our hostess, owner and top chef was gracious and charming. We had two educational cooking classes. I was impressed with the time taken for the classes and even more impressed with being served what we created, paired with great wines. The staff was very helpful, polite, and generous with their time. We met some wonderful people during our stay. Our final evening a large group of us went to Cortona snd ate at our hosts other restaurant which was also fabulous. Again we were all treated like VIPs. I truly cannot say anything bad about our stay. Silvia Baracchi and her family made our first time visit to Tuscany a memorable experience. The staff in Chicago was very helpful, professional and courteous. I cannot think of anything more that can really prepare you for how amazing this is.

Il Falconniere was spectacular. Silvia Baracchi and the entire staff was friendly, warm and could not do enough to try to please us. The rooms were very clean and the furnishings were lovely and atmospheric of Tuscany. The property itself is breathtaking. Chef Titi was wonderful. He was very patient, highly professional and very approachable. The recipes were delicious and although some of the recipes were a little complicated, Chef Titi was an expert instructor. What was especially nice was that the cooking lessons included others from outside our tour - but note it remained hands on and it was so organized that I never felt as though the kitchen was too crowded. Everyone could participate. One night we cooked with five women from China. Another night we cooked with a couple from Hawaii and another from Vermont. The concept of cooking and then dining together in the restaurant facilitated a comraderie and great conversation. Our guide Giancarlo was SUPERB! He was very knowledgeable and he tailored the tours to what he thought we would enjoy most. So much fun!

Our stay at Il Falconiere and cooking lessons with hostess Silvia Baracchi and head chef Richard Titi were wonderful. We could not have asked for a better experience! Nestled outside of Cortona with a view of the beautiful Tuscan countryside, Il Falconiere is a warm and inviting villa well cared for by Silvia and her attentive staff. Everyone made us feel at home. Our first night in Italy we spent on the terrace at Il Falconiere soaking in the beautiful view and watching an eclipse of the moon while enjoying delicious food and wine! Silvia projects a passion and enthusiasm for what she does that engages you immediately. We had one cooking class with Silvia and one with head chef Richard Titi. They made the experience fun and also meaningful, crafting menus that we will be able to reproduce at home. We made stuffed zucchini flowers, gnocchi, pici pasta, veal, lamb, and tiramisu. Silvia claims to have the best tiramisu, and we have to agree that it is the best we have tasted! In addition to the cooking, we enjoyed a delightful tour of Cortona led by Carol and a tour of the Baracchi Winery led by Silvia and followed by a wine tasting in the wine cellar at the restaurant. The food and the wine were outstanding and matched equally by the warmth and graciousness with which we were greeted!

Our stay was great! The staff very friendly. Very upscale. The cooking classes were terrific. Ambiance was gracious and relaxing. We signed up for the 3 day tour. The first class was perfect -- 6 people and all great fun. The second class had twelve people and was not ideal -- less hands on and some people were more interested in cooking than others. The chef / instructor was fabulous. The food delicious. The sharing of the meal was great fun and the serivce top-notch. Also, everything promised was delivered: the first meal (incredible), the classes, the wine tour, and the Cortona tour. The International Kitchen staff was very helpful, very responsive.
