About the location: Spread between the Apuan Alps and the Versilia Coast, the town of Massarosa is an area remarkable for its beauty, and not only because of the mild winters and the cool and breezy summers. Opera composer Giacomo Puccini once called this area his home, and like many other artists, was inspired by the rich and fertile plains of the Tuscan countryside. The Agriturismo La Casa Rossa, which dates back to the 16th century, was also one of his favorite hunting spots.

Today, La Casa Rossa is a farm devoted to corn, grain, cereals, and livestock. As a part of the Massacuiccoli Migliarino San Rossore Natural Park, the estate of La Casa Rossa also includes an amazing bird sanctuary on the lake of Massacuiccoli. On this estate, guests will find their home for their week in the holiday farmhouse. All traditionally-furnished bedrooms are air-conditioned and have en-suite bathrooms; additionally, the property offers a swimming pool, free WI-FI, bicycles, and a mini-football ground. Washers and dryers, as well as horseback riding, fly fishing, and kayak lessons are also available for a low additional fee.

The Estate is located in the Province of Lucca, which is the westernmost of Tuscany’s eleven provinces. The property is only about one hour away from Florence, 20 minutes away from Pisa, 15 minutes from Lucca. The delightful towns of Pietrasanta and Camaiore and the famous seaside resorts of Viareggio and Forte dei Marmi are nearby and easily accessible.

About the Cooking Lessons: The school is now located in the 16th century villa of La Casa Rossa. Students encompass every level from culinary beginners to accomplished chefs who come to study the unique nature of Tuscan cuisine. Taught by three experienced professional chef instructors, all classes are completely hands on, small in size and completely conducted in English. Classes make use of all-natural, seasonally-fresh ingredients. Essential Tuscan techniques you will master include: fresh homemade pasta, raviolis, gnocchi, pizza, focaccia, risotto, bruschette and crostini, roasted meats, fish and meat preparation, pastry dough and desserts, biscotti, ice creams and sorbets, vegetable and grain soups…and much more!

  • You arrive on a Sunday and are welcomed with a traditional Tuscan lunch.
  • The remainder of the day is yours to settle in, explore the estate, swimming, or just relax while waiting dinner to be served.
  • Breakfast at 9:30 AM then lessons promptly start at 10:00 AM.
  • Lunch is generally served around 1 o’clock but be prepared to spend at least one hour with your legs under the table. You are on vacation after all!
  • At 3 o’clock our English speaking tour guides will pick you up for your daily excursion. Guided excursions include Lucca, Pietrasanta and a marble studio, Forte dei Marmi, Pisa and the beautiful lake Massaciuccoli, Viareggio and its market.
  • Dinner is served every night at 8 o’clock and it consists of several courses mainly prepared by your chefs. Each course is paired with excellent wines.
  • Your Tuscan Experience with us ends on Friday night at our Graduation Dinner where you receive a diploma certifying your newly acquired status as an ”Authentic Tuscan Cook” (Vero Cuoco Toscano).
