The wine cellar must be mentioned, as it is unique not only for its extensive collection of some of the greatest wines in the world, but also for the rooms that house them. The cellar descends vertically (and, yes, it is a challenging walk down and up!) from vaults that were built at the turn of the last century, with origins into the Roman era. The value and scope of the wines in the cellar is astonishing.
About the lessons: The cuisine of Don Alfonso is based on the principles of Mediterranean style, which you will explore during your hands-on cooking lessons. The origins of the cuisine are steeped in the traditions of the Campania region, combined with the creative interpretation of the Iaccarino family. They bring a contemporary ethos by using not only extra virgin olive oil, fresh seasonal fruits and vegetables, fresh fish or low fat meats, but also incorporating the most up-to-date cooking techniques. But the essential building blocks of the cuisines is the availability of the highest quality raw materials. They have dedicated themselves to producing their own fruits and vegetables, olive oil and lemon liqueur on their own farm near the restaurant. And, what they cannot produce, they buy from the best local artisanal food producers in the region. The Italian cookery classes are in the beautiful teaching kitchen that was completed in 2008, a colorful and inviting space outfitted with every necessity and modern convenience.
