Day One

Day Two

Day Three

- This afternoon, assemble for a second cooking class diving deeper into one of the most iconic Italian dishes; her majesty THE PIZZA. During this hands-on lesson, you will follow along with a master to make pizza from scratch.
- Afterward, dine together on your pizza feast and let the wine flow.

- Today enjoy a full-day culture and wine excursion through the Tuscan countryside, where the rolling hills of Tuscan wine country reveal some of the region’s most celebrated villages and wine estates. Depending on the season and local events, stops may include:
- Bolgheri – famous for its cypress-lined roads and legendary Super Tuscan wines, one of the most prestigious wine areas in Tuscany.
- Castagneto Carducci – a charming hill town rich in poetry, history, and breathtaking views over the surrounding vineyards and countryside.

Classes & InstructorsTwo of your classes will be led by one of your hosts, Chef Simonetta, at her beloved cooking venue Il Molino, located in the heart of the village. Set inside a beautifully renovated medieval home, the space retains its historic charm, complete with a traditional millstone at its center. Simonetta is deeply knowledgeable about local Tuscan food traditions, and she is assisted by her sous-chef Laura, who specializes in plant-based cuisine. Together they will guide you through the preparation of traditional dishes, including fresh pasta made from scratch, using seasonal ingredients and local products gathered from nearby markets and producers.
Your third class will be a lively pizza workshop with Chef Francesco at Xkè Qua, an award-winning pizzeria known for its artisanal approach and exceptional ingredients. During this special session, you will learn the techniques behind crafting Italy’s most iconic dish, from preparing the dough to baking the perfect pizza.
Guests who wish to deepen their culinary experience in Tuscany may also add an additional cooking class with Simonetta. Another optional experience is a gelato workshop at Gianna Tutta Panna, where a master gelato maker will introduce you to the art of traditional Italian gelato by having you sample a wide variety of delicious flavors. (Please note this is not a hands-on experience.)

Your accommodations during your stay in Campiglia Marittima will be based on availability and preference, but each of your options is equally charming. You will stay in one of 13 deluxe B&B rooms spread throughout town, all part of the Albergo Diffuso, a tourism model primarily used in small historic villages like this one. This scattered hotel concept allows for cultural immersion and engagement that creates a more authentic experience than typical hotels, and was designed to increase tourism to small towns.
These unique and comfortable accommodations are each attended to by the owners and hosts, who will welcome guests like family. Each guestroom and accommodation on offer has excellent views of the valley below, and visitors will enjoy a true experience of Tuscan life.
