Day One

- Arrival transfer from Pisa to Campiglia Marittima and check in to your accommodations.
- Around 6:00 pm, enjoy a welcome aperitivo in a private terrace overviewing the magic panorama of Val di Cornia. Here, you’ll meet the team that will accompany you throughout your stay.
- Dinner at Il Canovaccio, led by Chef Davide, featuring a three-course welcome meal paired with house wine – a perfect first taste of Tuscany. A symbolic restaurant in Campiglia Marittima, Il Canovaccio is more than just a place to eat. It’s a landmark for those seeking quality, tradition, and culinary innovation.

Day Two

This morning, head to your first hands-on Tuscan cooking class at Il Molino with Chef Simonetta.
Learn to craft traditional handmade pasta such as ravioli, pappardelle, gnocchi, and spaghetti alla chitarra, along with other typical Tuscan dishes. The menu will vary depending on the season. -
For lunch, enjoy the fruits of your labor, served with local wine.
- Free time to rest or explore town.
- Around 4 pm, you will transfer to the picturesque town of Suvereto, where you will have a winery tour and tasting at one of the region’s renowned estates.
- This premium guided tour of the estate and its vineyards will introduce visitors to their unique biointegral philosophy. You will tour their production areas, including the barrel room.
- After the wine tasting, transfer to the charming village center, and have 3-course dinner at a restaurant located on the main square.
- Return to your accommodations after dinner.
Day Three

- Breakfast at your accommodation.
- This morning, enjoy a seasonal excursion to learn more about the local flavors.
- You might visit :
– a local cheesemaker to learn about the local pecorino (sheep’s milk cheese) followed by light lunch.
– OR head to an artisan olive oil mill to learn about the production of extra virgin olive oil followed by local lunch - This afternoon, assemble for a second cooking class diving deeper into one of the most iconic Italian dishes; her majesty THE PIZZA. During this hands-on lesson, you will follow along with a master to make pizza from scratch.
- Afterward, dine together on your pizza feast and let the wine flow.
- Overnight.
Day Four
- Breakfast at your accommodation.
- Full-day culture and wine excursion through the Tuscan countryside. Depending on the season, stops may include:
– Bolgheri – Famous for its cypress-lined roads and Super Tuscan wines.
– Castagneto Carducci – Rich in poetry and panoramic views.
– Sassetta – A hidden gem in the hills.
– An additional visit to a prestigious winery with tastings. - Lunch at a typical trattoria, house wine included
- Return to town for a relaxing dinner a la carte at one of the local restaurants, served with local wine.

Day Five

- Breakfast at your accommodation.
- After breakfast, head out with your new friends to live the life of the residents of Campiglia Marittima! Visit a local market or markets, or local shops or producers, depending on the day, to select the products you will use for your cooking class.
- Return to the kitchen for a creative cooking session using your purchases. The menu will be inspired by what you discovered that morning and prepared using the ingredients you selected: a true celebration of seasonal and local Tuscan flavors.
- Enjoy your afternoon at leisure. Take time to relax or explore independently. You may also choose to arrange an additional activity such as a gelato-making class or a visit to the local hot springs.
- This evening, dine out on your own in town at one of the local restaurants in the village.
Day Six

- Breakfast at your accommodation.
- Transfer to Livorno, the vibrant port city, for a private guided tour.
- Explore the city’s canals, markets, and seaside charm – each with its own story.
- Enjoy a traditional Livornese seafood lunch, featuring the local specialty Cacciucco – a rich and hearty fish stew.
- This afternoon, return to Campiglia Marittima for rest and time for packing.
- Farewell dinner tonight at Il Canovaccio or another local restaurant, paired with local wine.
- Overnight .
Day Seven

- Breakfast and check-out. Transfer to the local train station.

Classes & InstructorsYou will take part in three cooking classes during your stay in Campiglia Marittima. Two of your classes will be taught by one of your hosts, Simonetta, and the last class will be a pizza workshop taught by Chef Francesco. Located in the heart of the village, Simonetta’s beloved cooking venue, Il Molino, is located inside a classic, renovated medieval home, complete with a millstone at its center. Chef Simonetta is an expert on local food, and she is assisted by her sous-chef, Laura, who specializes in plant-based cuisine. Under her instruction, you will visit local markets and learn how to make pasta from scratch.
Your third class will be a pizza workshop with Chef Francesco at Xkè Qua. Xkè Qua is an award winning pizzeria known for its high-quality, artisanal pizzas. During this special workshop, guests can learn to craft Italy’s most iconic dish.
You may also choose to add an additional cooking class with Simonetta, or you can arrange for a gelato-making workshop at Gianna Tutta Panna. Discover the art of gelato-making with a master gelato maker, and taste dozens of delicious flavors.Excursions- Visit to Suvereto Winery
