Cooking in a Medieval Tuscan Village

  • Please note that travelers to Campiglia Marittima ought to be in reasonably good physical shape as they will have to navigate steep hills and many steps throughout the week. 

    Day One

    Pavlova

    • Arrival transfer from the Campiglia Marittima train station, where your Tuscany tour begins, followed by check-in at your accommodations in this charming medieval village surrounded by the rolling hills of the Tuscan countryside.
    • Around 6:00 pm, enjoy a welcome aperitivo on a private terrace overlooking the breathtaking panorama of Val di Cornia. As you sip local wine and sample regional bites, you will meet the team who will guide your culinary journey through Tuscany.
    • Dinner tonight is at Il Canovaccio, led by Chef Davide, featuring a three-course welcome meal perfectly paired with local Tuscan wines. A symbolic restaurant in Campiglia Marittima, Il Canovaccio is known for its balance of tradition and innovation, offering your first taste of the delicious food and wine culture of Tuscany.
    • Overnight at your B&B.

    Day Two

    Village of Suvereto

    • Depending on your accommodation for the week, breakfast will be served either at your B&B or at a local pastry shop in town, giving you a taste of daily local life in Tuscany.
    • This morning, head to your first hands-on cooking class at Il Molino with Chef Simonetta. During this authentic Tuscan cooking lesson, you will learn to prepare traditional dishes such as handmade ravioli, pappardelle, gnocchi, and spaghetti alla chitarra. These classic recipes highlight the simplicity and flavor of fresh pasta, seasonal ingredients, and authentic Tuscan cuisine. The menu will vary according to the season and the freshest local products available.
    • For lunch, enjoy the fruits of your labor at the Tuscan table, accompanied by carefully selected local wines.
    • Free time follows to relax or explore the village’s cobblestone streets, artisan shops, and scenic viewpoints overlooking the countryside.
    • Around 4 pm, transfer to the picturesque medieval town of Suvereto for a wine tour and tasting at one of the region’s renowned estates in the heart of Tuscan wine country.
    • This guided tasting and estate visit will introduce you to the winery’s vineyards and their distinctive biointegral philosophy. You will explore the production areas, including the barrel room, and sample a curated selection of Tuscan wines, often including elegant Sangiovese-based bottles and other exquisite wines typical of the region.
    • After the tasting, transfer to the charming village center for a three-course dinner at a restaurant on the main square — another opportunity to enjoy delicious food and wine in one of Tuscany’s most beautiful historic towns.
    • Return to your accommodations after dinner.

    Day Three

    The sheep's wool is also sold to local producers.

    • Breakfast.
    • This morning, enjoy a seasonal excursion to learn more about the local flavors.
    • You might visit:
      • A local cheesemaker, where you will learn how traditional pecorino cheese is produced using time-honored methods. Afterward, enjoy a light lunch featuring regional cheeses and other local delicacies.
      • OR an artisan olive oil mill, where you will discover the production of extra virgin olive oil, one of the most essential ingredients of Tuscan cooking. Your visit will conclude with a local lunch highlighting olive oil, fresh vegetables, and other regional products. 
    • This afternoon, assemble for a second cooking class diving deeper into one of the most iconic Italian dishes; her majesty THE PIZZA. During this hands-on lesson, you will follow along with a master to make pizza from scratch.
    • Afterward, dine together on your pizza feast and let the wine flow.
    • Overnight.

    Day Four

    • Breakfast.
    • Today enjoy a full-day culture and wine excursion through the Tuscan countryside, where the rolling hills of Tuscan wine country reveal some of the region’s most celebrated villages and wine estates. Depending on the season and local events, stops may include:
      • Bolgheri – famous for its cypress-lined roads and legendary Super Tuscan wines, one of the most prestigious wine areas in Tuscany.
      • Castagneto Carducci – a charming hill town rich in poetry, history, and breathtaking views over the surrounding vineyards and countryside.
      • Sassetta – a peaceful hidden gem tucked into the hills, offering a glimpse of authentic local life in Tuscany.
      • An additional stop at a prestigious estate for a wine tour and guided tasting, where you will sample a curated selection of local wines and learn about the traditions behind these exceptional bottles.
    • Lunch will be served at a traditional trattoria, where delicious Tuscan food and house wine highlight the flavors of the region.
    • Return to Campiglia Marittima in the evening for a relaxing à la carte dinner at one of the village’s local restaurants, another opportunity to experience the food and wine culture of Tuscany.
    • Overnight

    Day Five

    Exploring town

    • Breakfast.
    • After breakfast, head out with your new friends to live the life of the residents of Campiglia Marittima! Visit a local market or markets, or local shops or producers, depending on the day, to select the products you will use for your cooking class.
    • Return to the kitchen for a creative hands-on cooking session, where the menu will be inspired by the local products you discovered that morning. Using seasonal ingredients from the market, you will prepare traditional Tuscan dishes that reflect the region’s authentic flavors — a true celebration of seasonal produce, fresh pasta, olive oil, and rustic Tuscan cooking.
    • Enjoy your afternoon at leisure. Relax in town, wander the village’s cobblestone streets, or explore the surrounding countryside. Optional activities may also be arranged, such as a gelato tasting experience, a visit to nearby hot springs, or an art-focused excursion. Please inquire for options!
    • This evening, dine out on your own in town at one of the local restaurants in the village.

    Day Six

    Livorno

    • Breakfast.
    • Explore Livorno’s historic canals, lively markets, and seaside neighborhoods with your local guide, discovering stories of the city’s maritime past and its unique character within Tuscany. This coastal visit adds another dimension to your Tuscany tour, blending culinary discovery with culture and history.
    • Lunch will feature a traditional Livornese seafood meal, including the local specialty Cacciucco, a rich and flavorful fish stew that reflects the region’s deep connection to the sea.
    • In the afternoon, return to Campiglia Marittima for time to rest, enjoy the views of the Tuscan countryside, and prepare for your final evening.
    • Tonight gather for a farewell dinner at Il Canovaccio or another local restaurant, where Tuscan wines and regional specialties provide a memorable final celebration of your food and wine journey through Tuscany.
    • Overnight .

    Day Seven

    Meditate from atop this hilltop town

    • Breakfast and check-out. Transfer to the local train station.

    Classes & Instructors

    Two of your classes will be led by one of your hosts, Chef Simonetta, at her beloved cooking venue Il Molino, located in the heart of the village. Set inside a beautifully renovated medieval home, the space retains its historic charm, complete with a traditional millstone at its center. Simonetta is deeply knowledgeable about local Tuscan food traditions, and she is assisted by her sous-chef Laura, who specializes in plant-based cuisine. Together they will guide you through the preparation of traditional dishes, including fresh pasta made from scratch, using seasonal ingredients and local products gathered from nearby markets and producers.

    Your third class will be a lively pizza workshop with Chef Francesco at Xkè Qua, an award-winning pizzeria known for its artisanal approach and exceptional ingredients. During this special session, you will learn the techniques behind crafting Italy’s most iconic dish, from preparing the dough to baking the perfect pizza.

    Guests who wish to deepen their culinary experience in Tuscany may also add an additional cooking class with Simonetta. Another optional experience is a gelato workshop at Gianna Tutta Panna, where a master gelato maker will introduce you to the art of traditional Italian gelato by having you sample a wide variety of delicious flavors. (Please note this is not a hands-on experience.)

    • Full-day culture and wine excursion through the Tuscan countryside of Bolgheri, Castagneto Carducci, or similar

    • Optional excursion available – Natural Silk Printing Workshop: Connect with nature through creativity and learn to print the wonderful colors and patterns of the Etruscan Coast onto a beautiful pure silk stole. You will employ local flora and fauna as tools to produce this unique Ecoprint technique. Materials and mid-session tasting break included. Inquire for pricing.
    Transfer Details
    • Private arrival and departure transfers from the Campiglia Marittima Train Station. (Transfers from/to Pisa can be quoted on request.)

Accommodation Information

Your accommodations during your stay in Campiglia Marittima will be based on availability and preference, but each of your options is equally charming. You will stay in one of 13 deluxe B&B rooms spread throughout town, all part of the Albergo Diffuso, a tourism model primarily used in small historic villages like this one. This scattered hotel concept allows for cultural immersion and engagement that creates a more authentic experience than typical hotels, and was designed to increase tourism to small towns.

These unique and comfortable accommodations are each attended to by the owners and hosts, who will welcome guests like family. Each guestroom and accommodation on offer has excellent views of the valley below, and visitors will enjoy a true experience of Tuscan life.
