Castellina in Chianti – Cooking at a Wine Estate with Chef Laura

What mysterious force drives some of us to relinquish all we know for the promise of a dream? Here is one account. In the early 90’s a Florentine family led by Laura, Giorgio and their two sons left behind the bustle of their famous city for the lure of a simple life beneath the Tuscan sun.

Laura will teach you the secrets of typical Tuscan dishes such as crostini with chicken liver, ribollita, pasta and beans, stuffed boar, or chicken cacciatore. The cooking courses are held in the morning at 9:30 a.m. and last around three and a half hours, for a minimum of 2 people and a maximum of 10. Lunch will follow.

Your culinary adventure will start in the center of Castellina in Chianti with shopping at the local mercato and a visit to butcher shop with Laura.

Classes will include:

• Selection of 3 antipasti
• 2 pasta dishes
• Main course & side dish
• Dessert

  • Morning class: 9:30AM – 1PM

This class requires you have your own transportation to and from the estate.

Our cooking day in Castellina in Chianti was an absolute highlight of our trip to Tuscany/Siena. Chef Laura was a delight, and the whole experience was exactly what we hoped for - in fact, it was better than expected. The variety of recipes Chef Laura selected led to discussions of cooking techniques that have served us well, and they provided an avenue to stories of her family and of crowing up in the region that made the day even more enjoyable. Best of all, the recipes were very easy for us to recreate once we returned home, and we've served them to friends and family a number of times during the past few months. Chef Laura was marvelous, and the day was perfect. There's no question that we'll keep you in mind for our future travels, and we'll encourage our friends to consider a day of cooking with your organization as well. Thank you!!
