Rome (Mazzano Romano) – Lesson with a Professional Chef
Meet one of our highly qualified rotating chefs at a central location in Rome then depart for the ancient medieval village of Mazzano Romano, 30 minutes north. Weather and season permitting, you will take a walk through the charming town where local Roman city dwellers escape, and pick ingredients fresh from the extensive garden and choose eggs right from the farm. During this simple one-day cooking class not intended for serious and/or advanced cooks, the chef will take you through the course of a delightful meal in a country home, with good local wine.
Once you have finished your meal, you will be returned to the center of Rome.

This was absolutely one of the best parts of our entire trip. Everything was incredible, from the drive to the village, to shopping at the local market, to the gorgeous apartment where the class was held, to (of course!) the food itself. The chef was warm and welcoming, and everything about the experience exceeded our expectations. I searched high and low to find the right cooking class and I'm so glad I did, because this was it! I can't recommend it enough.
My husband and I were picked up at our Rome hotel by Chef Fabio. We drove to his holiday home in Mazzano Romano. It was absolutely lovely! We went to the market and picked up a few items, said hello to the locals as we walked the cobble stone streets. We spent a couple hours preparing our meal from scratch. Fabio and Monica sat with us for dinner. We ate a delicious meal, drank several bottles of wine and had a wonderful conversation with Chef Fabio and Monica. It was our favorite experience from Rome, and we will surely do it again!
Just a quick note to say how much I enjoyed Chef Fabio's Mazzano Romano class last week. The day was the highlight of our Italian vacation, from the cooking lesson itself to the tour of the nearby medieval village and winery. I came home excited to try out the techniques Fabio taught us, as soon as I run out and buy a pasta roller! I will definitely be recommending his classes to anyone I know planning an Italian holiday. Truly superb!

The cooking lesson was wonderful from start of day til finish. It was great and convenient that we were picked up at our hotel. To arrange travel would have been a nightmare. Our lesson started out with shopping for ingredients which was very informative. Then we proceeded to a tour of Mazzano Romano with Fabio and Claire his helper. Cooking was so fun and such a learning experience! After working in a bakery and cooking my whole life, I can honestly say I learned a lot about technique and flavor layering. We learned to make a meat dish, three different types of filled pasta, and bruschetta. After eating our delicious food in Italy, Fabio took us to Calcata for a drink and walk. We then went to the vineyard where the wines we cooked with originated. We did a wine tasting and then were taken back to our hotel. It was by far the best day of my trip in Italy. I regret not booking the entire vacation with cooking lessons, as the smile from my face could not be wiped off for days. Honest to God I came home jetlagged but oh so excited to recreate the dishes for my family that the first thing I did was go buy a pasta maker for rolling out homemade dough. My husband and I were very lucky to be the only two people in the class, as it was off season. We very much enjoyed the whole experience. We have been to Rome several times before so it was nice to do something a little different and especially to spend some time in a private Roman apartment.
I have to say that I thoroughly enjoyed the whole day, and there wasn't anything that I didn't like. Chef Fabio is an interesting person and he made sure he knew our dislikes before we went shopping. Being able to go to his home in the Etruscan town was a wonderful experience, and it is truly a wonderful home. The shopping was interesting. He showed us how to make two different pastas and sauces. He also gave us hints on how to use leftovers by using butternut squash ravioli filling to make fritters (I'm sure there is a better Italian name, but I can't think of it.) He also showed us how to use the water the vegetables were cooked in to help flavor the sauces and to make them creamy without the added calories of cream. We ate ravioli stuffed with ricotta and artichoke in a sauce flavored with artichoke water and something I can't remember; pici with a romanesco broccoli and sausage sauce, the two types of chicken, and we shared a portion of a chocolate, nutella, and whipped cream dessert he put together. And we had plenty of wine to drink. I also enjoyed the walk through the other town that was included. There were three of us in the class and it was very enjoyable. It was special to have the class at Chef Fabio's home in the country. I would certainly consider this or another class if I am able to return to Rome in a couple of years.

I joined the class in the small town of Mazzano Romano and was introduced to the other 4 participants, 3 Americans and an Australian plus Emmanuel the chef. We the shopped together at the butcher and vegetable shop for ingredients. We were encouraged to help choose fruit and vegetables required for the recipes. We the went to the minibus and drove to the medieval part of the town where we shopped at the delicatessen section of the minimart and then proceeded further uphill to the apartment where the class was held. The kitchen was well equipped and we were all given an apron and a glass of wine. Emmanuel also had an assistant and together they demonstrated and assisted us to make bread, pasta - 3 types, prepared dessert and tomato sauce from scratch. We chopped whisked, stirred, rolled, peeled and diced whilst wine flowed and friendly chatter filled the kitchen. Putting pasta dough through the machine as a group effort was lots of fun. We were treated to a lunch of about 6 courses and more wine. The food was delicious and it was a fabulous day, I would thoroughly recommend this as an activity to enhance your travels. Carole
