The history of the Azores stretches back further than many expect. Archaeological discoveries suggest that the islands may have been inhabited long before the arrival of Portuguese settlers in the 15th century. Underground structures known as hypogea, likely used for storing grain, along with evidence of early agriculture dating back to 700–800 AD, point to earlier visitors — possibly seafaring Vikings drawn by the same natural beauty and fertile land that define the islands today.

This rich history is reflected in Azorean cuisine, which is rooted in local traditions and shaped by the sea and land. Fresh seafood plays a central role, with dishes such as octopus stews, fried mackerel (chicharros fritos), and grilled limpets (lapas grelhadas) among the highlights. Local ingredients such as pimenta salgada, a distinctive red pepper, add depth and character to many dishes. Meals are often served family style, showcasing the warmth and generosity of Azorean hospitality.
The islands are also home to a unique wine culture, where vines grow in volcanic terrain protected by stone walls. Culinary Tour of the Azores Itinerary

Day One

- Welcome to São Miguel Island! Upon arrival, you will be picked up at the airport and transferred to your hotel in Ponta Delgada, the vibrant capital of the Azores.
- Spend the rest of the day relaxing at the hotel or exploring the city at your own pace before your welcome dinner, which is within walking distance of your hotel.
- This evening, enjoy a traditional Azorean meal with drinks included, accompanied by a live performance of Portuguese fado music. Fado, with its deeply moving and emotional melodies, is one of the most authentic expressions of Portuguese culture. Recognized by UNESCO as an Intangible Cultural Heritage of Humanity, this musical genre emerged in 19th-century Lisbon. Its haunting tunes and heartfelt lyrics often explore themes such as saudade — a profound sense of longing or nostalgia — as well as fate, love, and loss. (The performance is available from March 1st onward.)
- Overnight.
Day Two

- Breakfast at the hotel.
- The day begins with a shared small group food tour — a guided Ponta Delgada food tour through the lively capital of the Azores. As you explore the city, you will learn about its rich history and how Azorean cuisine and local gastronomy have evolved alongside it. Along the way, enjoy tastings of traditional Azorean foods and drinks, all sourced from local producers and eateries — a perfect introduction to local flavors, local foods, and Azorean culture.
- After the food tour, visit a family-owned vineyard nestled in the heart of São Miguel. Established in the early 20th century, this vineyard has been lovingly maintained across generations, producing elegant wines that reflect the island’s volcanic soil and unique terroir. You will enjoy a guided tour of the estate, followed by a tasting of three distinct wines paired with regional tapas — a relaxed and intimate experience that highlights the island’s wine culture.
- Return to the hotel. Dinner on your own — if you are still hungry!
- Overnight.
Day Three

- Breakfast at the hotel.
- After breakfast, you will be picked up for a visit to the farmers market, where you will select fresh ingredients for your first hands-on cooking class (shared small group).
- On the way to Furnas, there is a stop in Vila Franca do Campo to taste the iconic Queijada da Vila, a traditional local cheesecake tart.
- At Furnas Lagoon, you will prepare a traditional Azorean meal using geothermal heat — a unique method deeply rooted in Azorean cooking and local traditions. While the food cooks underground, enjoy an easy walk around the lagoon, with the option to bathe in the nearby hot springs.
- Lunch is then enjoyed picnic-style by the lagoon.
- On your return journey, you will visit Furnas’ mineral springs, Pico do Ferro viewpoint, the Gorreana Tea Factory, and the Santa Iria viewpoint — offering incredible perspectives of the island’s landscapes and history.
- Evening at leisure and dinner on your own.
- Overnight.
Day Four

- Breakfast at the hotel.
- Today you have the freedom to explore the island at your own pace. Whether you choose to uncover hidden gems, sample local food at nearby restaurants, or immerse yourself in nature, the day is yours to enjoy.
- You may also arrange additional excursions such as jeep tours, hiking, sightseeing, canyoning, diving, kayaking, and more — offering even deeper ways to discover São Miguel and its incredible natural setting.
- Overnight.
Day Five

- Breakfast at the hotel.
- Today you will visit a local farm on a shared small group tour and immerse yourself in authentic Azorean culture and rural life.
- Explore the farm’s animals, plants, and traditional practices, with opportunities to participate in activities such as hand-milking cows and harvesting corn. This hands-on experience offers a genuine connection to local communities and local traditions.
- Enjoy a family-style meal featuring regional products such as freshly baked bread, homemade jams, and a selection of local cheeses, along with an infusion of farm herbs and traditional pastries.
- Upon returning to town, you will have a free afternoon to explore Ponta Delgada at your leisure.
- Dinner on your own.
- Overnight.
Day Six

- Breakfast at the hotel.
- Today you will enjoy a private cooking class featuring traditional Azorean dishes. This experience offers an introduction to local gastronomy, with a relaxed and welcoming atmosphere that encourages connection with locals.
- The class begins with a presentation of the small farm, showcasing traditional fruits, vegetables, and flowers. You will also receive an overview of the appetizers and wines to be tasted.
- You will then prepare four traditional dishes: a soup, a meat dish, a fish dish, and a dessert — all highlighting the island’s seasonal ingredients, local flavors, and culinary traditions.
- Overnight.
Day Seven

- On your final full day, enjoy a private full-day journey through the breathtaking landscapes of Sete Cidades, one of the most iconic areas of São Miguel Island.
- Travel comfortably by van or jeep with a knowledgeable local guide who will share insights, fun facts, and compelling stories about the region. Along the way, there will be relaxed stops to take in the scenery and enjoy the stunning viewpoints.
- In the afternoon, enjoy a tea break before continuing your exploration.
- The day concludes with a traditional fogo de chão dinner at a peaceful countryside estate, accompanied by the melodic sounds of the viola da terra — a truly authentic and memorable Azorean experience.

Classes & InstructorsDuring your stay in the Azores, you will take part in two unique hands-on cooking classes on traditional regional foods. Your first cooking class will take place in the village of Furnas, which is known for its geothermal activity and is based around an active crater lake, or volcanic caldera. On the way, you will purchase ingredients from a local market and enjoy a tasting experience. Furnas is famous for its cozido stew, which is a meat and vegetable dish that is cooked undergound using geothermal heat for up to six hours. You will travel to the edge of the crater, the Lagoa das Furnas, and prepare a cozido with the help of your chef instructor using the ingredients you picked up.
Your second cooking class will take place at a small family farm where you will be greeted with appetizers and wine. This cozy, family-friendly setting will give guests a taste of day-to-day life in the Azores. Together you will prepare 4 traditional dishes using ingredients sourced on the farm and from local producers. You will enjoy wine and snacks while preparing a soup, a meat dish, a fish dish, and dessert. The specific ingredients and dishes will depend on the season.Excursions- Fado Dining Experience
