A very interesting visit to the market where the ingedients had been purchased. Stephano is a very sincere "foodie"" and much emphasis was placed on healthy methods of cooking, as well as the traditional. The menu was excellent, and the class was very personal...in Stephano's home kitchen, with the asistance of partner and young trainee. Exceptional wines, which matched the dishes, and an opportunity to be "hands on" with the preparation. A bonus, was drive to a National Park nearby to admire a Roman Aquaduct. Wonderful day, and recommend this to anyone interested in Italian cooking.

Our day with Stefano could not have been better. We fancy ourselves food-knowledgeable and decent home chefs,and unlike several other "cooking" classes we had on our trip, our day with Stefano stretched our knowledge if cooking, food and wine. His planned menu reflected the our requests. The start of the tour at the local farmers' market was wonderful and when we saw some escarole (our favorite vegetable) at the market, Stefano bought it and added it to our meal. He was charming, highly informative and his deep knowledge of food history greatly enhanced the entire experience. A talented chef, he also taught us a whole new roasting technique Ã¢â‚¬â€ one that we have now introduced into our own kitchen. We also loved the way the day was presented. We cooked two samples of each course, then we sat at a beautifully-laid table and enjoyed them (with Stafano's excellent choice of wine for each), before beginning the next course. This gave us much time to learn, prepare and then enjoy each plate before going on to the next. Stefano's two assistants were also well prepared and delightful. This was a highlight of our three week trip to five countries. We continue to recommend Stefano to our food-loving friends.

For the Rome cooking class with Chef Stefano, we booked a half day class and it lasted almost 7 hours - - - it was a bit lengthy, but very enjoyable. We learned new techniques with Stefano, although he did 90% of the cooking. We would have enjoyed a more hands-on class, but we learned a lot!
My friend and I booked a cooking school with Stefano Cirillo on November 6, 2007 in Rome. I just want to let you know how much we enjoyed both the class and Chef Cirillo. He was extremely knowledgeable about the food of the region and the dishes he expertly prepared. His delivery and demonstrations were well organized. Not only were we treated to passionately prepared foods but we learned so much from him in the process. We were more than pleased with the school and would heartily recommend it to anyone who is planning a stay in Rome. You will be treated extremely well and learn a great deal about Italian food. Stefano was knowledgeable, passionate and very engaging. The recipes were more complicated than Barbara's and, unlike Barbara, Stefano did not provide written recipes, requiring a lot of note-taking. Would have been nice to have the recipes. The afternoon walk along the Appian Way was an unexpected delight as were the autographed copy of his book and the homemade grappa that finished off the day.

The chef brought us to the market and pointed out the different foods that were indigenous to the area, then we went to his cooking location for a wonderful culinary experience. He was very informative and entertaining. We were able to try and make many wonderful dishes and learned about appropriate wine choice to go with them. The only addition I would have like were the recipes and the step by step directions in making them. I spent a great deal of time writing everything down and would have liked to enjoy the experience more. The food, company and his associates were great.

Just a note to let everyone at the International Kitchen know our class with Chef Stefano in Rome was just fabulous!!! We were picked up early and spent the morning on his gastronomical tour. Each stop was more interesting and delicious! His historical knowledge was amazing. Then we were off to his home for the afternoon of cooking and eating, eating, eating, and eating some more!!! He and his assistants, Cynthia and Patricia, were so good to explain each step of each recipe and the history of why we were using the recipes. As an extra special treat, they had created a very special birthday celebration for me (since it was the same week as our class)--it's a birthday I'll never forget:):):) As with our class with Samira in Paris, my husband, Hank, is still talking about our fun experience. We highly recommend taking classes from Chef Stefano. Many, many thanks ... we both look forward to taking another class wherever our future travels take us!!!

Chef Stefano Cirillo and his assistants were wonderful. We had been caught in a torrential rainstorm on our way to the cooking class, and they met us with dry socks, slippers, towels, and dry sweatpants to wear (and we definitely needed them!). The class was well-paced, informative, and the food was delicious. It was great that we ate each course separately rather than sit down to an entire meal at one time. He introduced us to a "healthy" method of Italian cooking and provided insight into culinary history as well as technique. At the end of our day, we almost felt like family!

NOTHING WE DIDN'T ENJOY!!! ABSOLUTELY NOTHING!!! I was one of the highlights of our time in Italy. I will most definitely do this again. And, if in Rome, with Chef Stefano. He was warm engaging, FULL OF INFORMATION about new cooking techniques, history of local and regional foods and answering questions we had. No question was stupid. He was an excellent teacher/instructor. His assistants were lovely and a joy to share the day with. When we needed a break, he took us on a walk down the Appian Way. We picked wild herbs and got a bit of a history lesson of the area. Walked on cobble stones with chariot ruts...A much need walk to help digest the wonderful foods eaten before so we could go back to learn and eat some more. It was an EXCELLENT day. And I would highly recommend Chef Stefano's class to anyone wanting an experience with Italian cooking in a lovely environment with an EXCELLENT instructor. (I might add the wine served was superb!) Thank you for a memorable day in Rome!! The International Kitchen staff was completely on top of everything. I have no suggestions or complaints.

We went to the International Kitchen website before we left for Rome and saw the information for our chef. Knowing that he was teaching how to cook with a great healthy twist we were excited about our day. He found out that it was our Anniversary and made it extremely special. He took time with each and every dish and taught us about history of the foods AND Rome. We took a break in the middle of the day and went for a walk at the Roman aqueduct. Yes, you take your own notes, yes you work hands-on, yes you will come away FILLED with so much more than just a cooking lesson. Choosing this course was way above what we were expecting.

Our day with Stephano was very special. The market he took us to was amazing, full of different and interesting produce and I can still smell the wonderful smells. All of the food we cooked was delicious as were the wines he chose to accompany. Stephano was very enthusiastic and knowledgeable and we were quite pleasantly surprised to find that all of his cooking focused on achieving classic Italian results by utilizing a new and healthy way of cooking. There was a lot of hands-on participation which was excellent. No printed recipes meant that we took notes and really paid attention. Making stuffed zucchini flowers was a real treat as was eating a plum freshly picked from a tree in Stephno's garden, the best plum I have ever eaten in my life. Another definite highlight to the day, and something that made it more than just a cooking class, was a trip to the nearby Aquaduct on the Apian way.
I communicated with The International Kitchen via email and they were quite helpful. We also had another class booked for Florence which was cancelled at the last minute, due to the chef being sick, and they were very professional and helpful with that as well in trying to rebook, but unfortunately it did not work out.

Stefano and his team were terrific. I liked the amount of time we spent discussing different types of ingredients--for example, I never knew there were so many variety of tomatoes!! Stefano did an excellent job of explaining the technique in detail, and I liked the many small tastes of different things in and around his kitchen. I also liked that Stefano spent time talking about traditional techniques and placing cooking in the context of history, including from Roman imperial days. I learned a great deal and I had what was easily the best meal of my trip.
The staff was excellent--very knowledgeable, courteous and friendly. They were a lovely group with whom to spend a day in the kitchen!
My 23 year old daughter and I were the only student's in Chef Stefano's class. It was a fabulous day. I've been cooking for decades and consider myself a good cook, and yet we learned so much that I have already put into practice. We were treated like welcome guests in the home of the chef and his wife. The menu he had planned for us was paired with 4 different wines. Everything was delicious and he is an incredible teacher. Starting with our trip to the market through the end of the day, he imparted a great deal of very interesting information about the history of Italian cuisine, the reasoning behind his innovations in technique, and Italy in general. We learned, ate and drank wonderful wine all day. What could be better than that? I would highly recommend his class.
