Yorkshire is an area in Northern England named for the city of York and known for its strong regional identity. Yorkshire culture is unique and known for its combination of outside influences, including Celts, Romans, and Vikings. The distinctive Yorkshire accent is considered synonymous with geniality and trustworthiness, which speaks to the area’s reputation for welcoming outsiders into their supportive and thriving local communities.

Traditional Yorkshire puddingYorkshire is nicknamed “God’s Own Country” due to its natural beauty and bountiful land, inhabited by hard-working laborers and craftsmen. Yorkshire’s most well-known gastronomic claim to fame is the “yorkshire pudding,” which is a baked type of popover with a soft middle, usually served with savory meats and gravy. Yorkshire lamb and pork, local cheeses, and a variety of baked goods–both sweet and savory–are other staples.

Yorkshire has a rich history and has ben home to many important creators over the years, such as several important writers, including Bram Stoker and the Bronte Sisters. Traditional folk music and folk dance are an important part of Yorkshire’s cultural history, with particular emphasis on the Long Sword dance, which is a hilt-and-point sword dance.

The beautiful countryside villages of YorkshireThe Yorkshire Dales National Park, where you will stay,  is popular for its unique landscapes, medieval history, variety of wildlife, and delicious culinary experiences. Your boutique residence  is located in Low Row, a hamlet in the heart of Swaledale. Swaledale is a steep-sided and idyllic valley famous for its local breed of strong sheep and its extensive history of cheese-making, which can be attributed to the many local farms that have long specialized in animal husbandry. And Swaledale is also one of the recent locations used in the filming of the latest Wuthering Heights film!

Your hostess Emma, ready to lead you on a culinary journey in Yorkshire. Your host Emma has lived in the Yorkshire Dales for over 30 years and absolutely loves every part of the area–its beauty, people and experiences it has to offer. Her background is hospitality, travel, and cooking, including years working in France on hotel barges and at ski chalets. Most recently–for the past 8 years–her business has been based in the Dales. Emma is a huge foodie and loves trying new dishes, embracing local ingredients, most of all sharing these with others. Her other passions are travel, horses, skiing, wild swimming, and hiking–along with a little bit of art and reading travel novels.

Yorkshire Culinary Vacation Tour Itinerary

  • Day One

    Enjoy a perfect view of the surrounding landscape.

    • Transfer from the Darlington or Northallerton train stations. Arrive at Hazel Brow around 4pm and check in.
    • You will have time to relax and settle in with a hot drink and homemade cake.
    • Tonight you will enjoy a 3-course evening meal prepared by your host and featuring English wines.
    • Sample Dinner Menu – Starter: Courgette Pakoras with mint raita & crispy cucumber salad.
      Main: Monkfish curry with clams & mussels served with coconut rice.
      Desert: Lemon Posset with Italian meringue
    • Overnight.

    Day Two

    Your cheese-making class is a highlight of the tour

    • Breakfast will be a combination of continental and cooked Full English Style (sausage, bacons, beans, eggs, hash browns, mushrooms & tomatoes). Options will include homemade granola, yogurt, a variety of fruit, and pastries.
    • You will then head to Lacey’s Cheese in the nearby village of Reeth. Here, you will spend the morning making your own cheese from scratch. Lunch will take place afterward at the cheese making school.
    • Return to Hazel Brow House after lunch for a 2-hour guided hike with local expert Matt. Enjoy some refreshing outdoor exploration in this idyllic destination, enjoying the sights and smells of the countryside.
    • Your afternoon exertions will help you earn your next culinary delight – another 3-Course dinner paired with England’s best wines!
    • Sample Dinner Menu – Starters: Garlic & Chilli Tiger Prawns.
      Main: Duck Breast, plum sauce. Pomme Anna, Braised red cabbage, green beans.
      Desert: Chocolate Mousse, vanilla shortbread.

    Day Three

    The beautiful estate

    • Breakfast
    • You will take a scenic drive over the ‘Buttertubs Pass,’ a beautiful route connecting Swaledale and Wenelseydale and head to Bolton Castle. You will take a tour of the castle and uncover all of its history, grim legends, and beautiful architecture.
    • Afterward, tea will be served by the fire in their café. There will be plenty of sandwich options, quiche, pie, and pastries to fill you up for the remainder of the day’s activities.
    • This afternoon, take part in an Alpaca walk and Experience at your accommodations.
    • Tonight enjoy another 3-Course feast with wine.
    • Sample Dinner Menu – Starters: Burata & Heritage Tomatoes.
      Main: Coq au vin, creamy potatoes, tenderstem, honey roast carrots.
      Desert: Basque cheesecake & balsamic strawberries.

    Day Four

    Sourdough you bake together during your culinary tour

    • Breakfast.
    • Have a 40 minute drive to the medieval market town of Middleham and to the Chapel Kitchen for a morning of hands-on bread making, specifically featuring sour dough.
    • Create delicious sourdough breads, with tastings along the way and enjoy lunch together afterwards.
    • On the way home, you will stop at the Wensleydale Spirit Company, set in a disused railway station for a unique local gin tasting.
    • Afterward, soak up your gin with a 3-Course Dinner at your lodging!
    • Sample Dinner Menu – Starters: Home cured gin & yuzu salmon, homemade rye bread.
      Main: Traditional Roast dinner with all the trimmings.
      Desert: Homemade rice pudding, caramelised top, roast cinnamon apples.

    Day Five

    • Breakfast.
    • Departure 10.30am

    Classes & Instructors

    Your cooking classes in Yorkshire will focus on two staples of any good British diet – bread and cheese! Your first class will take place in the nearby village of Reeth at Lacey’s Cheeses, which is a small dairy and cooking school that specializes in traditional cheeses and gelato-making. Your instructor will lead you in a cheese-making workshop followed by a chees-based lunch.

    For your second class, you will travel to the medieval town of Middleham to learn the equally ancient art of baking sourdough bread. The cooking school is inside of a refurbished 19th Century Methodist Chapel in the heart of town, and taught by experienced bakers and chefs. The class will walk you through the basics of sourdough, including sections on: Mixing and folding, inclusions — ideas for flavour combinations, benching and shaping, proofing and baking, care and feeding of your starter.

    In addition to these classes, you are welcome to join chef Emma in the kitchen to help prepare your evening meals. You can roll up your sleeves and get to work, sit and observe, or spend the time relaxing – as you prefer! It might also be possible, depending on the week, to organize an additional workshop featuring picking and fermenting.

    Transfer Details

    Arrival and departure transfers are included to and from the Darlington or Northallerton train stations. (Transfers can also be arranged from Leeds, Newcastle and Manchester airports for an additional cost.)

Accommodation Information

You will have exclusive use of Hazel Brow, a country house located in Low Row, a hamlet in the heart of Swaledale. This boutique hotel is elegant and spacious, perfect for reconnecting with nature during the day and unwinding with companions in the evening. The interiors are tastefully decorated, allowing guests to relax in a calm and curated environment. The guesthouse features 7 full size bedrooms (3 with en suite bath, while 4 of them share an additional 2 bathrooms), plus a smaller 8th room if needed. It also has a large dining space, a cozy common room with an always roaring fireplace, and a beautiful garden and views across the valley.
