Join us at a beautifully restored “petit château” situated in Roanne, in central France, a region where winters are mild and the countryside is almost always green.
The Auvergne-Rhône-Alpes region is renowned for its amazing food and its many national and natural parks, as well as its ancient ruins, medieval fortresses, UNESCO World Heritage Sites, Renaissance structures, and more! You will take a fabulous journey into the region’s past, and of course into its gastronomy with your hosts, Chef Denise and her partner Marlon.
Chef Denise began her professional career as an accountant. An education at Le Cordon Bleu in Chicago followed, and a passionate new chef emerged. She founded and owned her own cooking school and kitchen store near Chicago, where she taught thousands of students over its 12 years. During those years, her many visits to France convinced her it was a place she wanted to live – and cook! She loves to teach and is very eager to assist you in arranging your own culinary adventure.
She met her partner Marlon, an engineer and passionate “do it yourself-er,” by chance at a local Starbucks. They discovered their shared passion for France and French culture and started planning their great French adventure in 2019. They landed in picturesque Roanne, in the Auvergne-Rhône-Alpes region, where they purchased and began restoring their beautiful “petit château.”
The abundance of Alpine pastures, orchards, and vineyards make this an ideal destination for our culinary travelers. Much of the local produce has protected status, including Bresse poultry, Ardèche chestnuts, Grenoble walnuts, Nyons olives, Puy lentils, and no fewer than 17 cheeses! You can explore these ingredients and more during your French cooking classes with chef Denise. Lyon, the region’s capital and foodie mecca, is also at your doorstep, and an easy addition to your French culinary journey.
Our Hands-on Cooking Classes in Roanne
Our authentic cooking vacations in France include cooking classes with a professional chef in the restored kitchen of the château; sourcing of products from the chef’s garden and local markets; idyllic explorations of the town and its environs; beautiful accommodations in the château’s 3 renovated bedrooms; and much more!
We offer two exclusive and distinct culinary journeys:
- 5-night “French Connection” – This culinary immersion is designed to deepen your connection with the heart of French cooking. Through hands-on intensive lessons, you’ll explore the essential techniques, regional and seasonal dishes that define la cuisine Française – all reimagined with a modern, approachable touch. From foundational skills to inspired plating, each day builds your confidence, creativity and understanding of what makes French food so enduringly beloved. Whether you’re returning to the classics or discovering them for the first time, this experience invites you to cook with purpose, intuition and joy.
- 3-night “Repertoire Builder” – This focused, hands-on class is designed to expand your personal culinary repertoire with versatile dishes and timeless techniques that you’re return to again and again. Over the course of the session, you’ll learn how to layer flavor, adapt core methods to seasonal ingredients, and bring greater intuition and ease to your cooking. Think soups, salads, braising – each recipe we select is not just to teach, but to empower – helping you build confidence, skill and a refined sense of what works in the kitchen. Perfect for curious cooks ready to grow beyond the basics and develop a more instinctive, expressive style.
Cookery Courses in Petit Chateau Trip Itinerary

Day One
Your week will include a delightful variety of carefully selected excursions to enrich your stay. Activities are thoughtfully planned and are based on availability, time of year, weather, etc. What follows is a sample itinerary, not a hard-and-fast blueprint: your hosts will organize specific excursions that work best for your dates in order to maximize your experience.
- Arrival after 3pm (transfers can be organized from the train station on request).
- Welcome aperitif & apéro in the château’s Grand Salon.
- Relax and converse with your hosts and fellow students in anticipation of the first day of instruction. The 5-night French cooking vacation is designed to deepen your connection with the heart of French cooking – all reimagined with a modern, approachable touch! Chef Denise will give an overview of what to expect for the week as you settle in.
- Dinner provided in the formal dining room or terrace (weather permitting).
- Overnight.
Day Two
- Breakfast
- This morning hone your skills! Enjoy a 2-hour hands-on class session focusing on knife skills. Whether you are a beginner or an experienced cook, you will set the foundation for this week’s work.
- Lunch at the château based on your morning session.
- Afternoon hands-on cooking class (2 hours), in which you will work on the evening meal.
- Free time to relax or visit local shops and attractions.
- Evening apéro and dinner to follow, based on your efforts.
- Overnight.
Day Three
- Breakfast.
- This morning, enjoy a visit to local producer. The specifics will depend on the season and your particular week, but might include a farm visit or a winery visit.
- Lunch out during the excursion.
- Return to the château.
- Evening apéro, followed by a delicious dinner.
- Overnight.
Day Four
- Breakfast
- Morning hands-on class session (2-3 hrs), working on tonight’s dinner.
- For lunch today, head into town to experience lunch at a local fine-dining restaurant.
- This evening, chef Denise will lead a plating and presentation discussion (1 hr).
- After, it is time for the final prep for dinner (1 hr).
- Evening apéro and dinner based on your efforts.
- Overnight.
Day Five
- Breakfast
- This morning enjoy another excursion, most likely to visit the local food market or other local producers.
- Morning hands-on class session (3 hrs) working on tonight’s dinner.
- Lunch will be served at the château.
- Free time to relax or visit local shops and attractions in Roanne.
- Final prep for dinner (1 hr), followed by a formal evening aperitif and farewell dinner.
- Overnight.
Day Six
- Breakfast.
- Departure. (Transfers can be organized on request to the local train station.)

- Final prep for dinner (1 hr).
- Evening aperitif and dinner to follow.
- Overnight.
Day Three
- Breakfast.
- This morning, enjoy a visit to local producer. The specifics will depend on the season and your particular week, but might include a farm visit or a winery visit.
- Lunch out during the day’s excursion.
- Return to the château and have an afternoon cooking session (3 hrs).
- Final prep for dinner (1 hr).
- Evening apéro and delicious farewell dinner.

Your hosts Denise and Marlon believe in embracing the best of what nature has to offer, so each class is a celebration of France’s seasonal bounty. Sample dishes might include: French onion soup, boeuf bourguignon, quiche Lorraine, tartiflette, crème brûlée, macarons, and profiteroles.

Accommodation Information
Château Dépierre is a beautiful nineteenth century estate located in downtown Roanne, France. Hidden from the street behind large gates, the property is actually a “clos," completely walled off and surrounded by lovely brick buildings and ivy. A delightful historic paradise in the spirit of art nouveau, this “petit château" is brimming with all of the grandeur one would expect of a distinguished maison.
Each of the 3 guest rooms has been carefully updated in keeping with historic styles while adding convenient, modern touches. Rooms have either a king or queen size bed, adorned with freshly ironed cotton sheets and comfortable duvets. Further, each room has its own, brand-new, en-suite complete bathroom with carefully chosen unique, vintage-style fittings that are reminiscent of the golden area of the home.
