Ingredients
- 250 grams mascarpone cheese
- 4 eggs
- 100 grams sugar
- 1 cup white vermouth
- 1 cup of brewed coffee
- 100 grams ladyfinger cookies
Directions
- In a bowl blend the mascarpone with the sugar and the yolk of 1 egg.
- In a separate bowl whisk the egg whites until stiff .
- Add the egg whites to the cheese, sugar and yolk mixture.
- Dip the ladyfingers quickly in the coffee and place them side by side in a loaf pan to create a bottom layer (the ladyfingers should be soaked with the coffee just a little, otherwise they will fall apart).
- Spread on top of this layer 1/3 of the cheese mixture.
- Prepare the next layer with the ladyfingers dipped quickly in vermouth.
- Over this layer add another 1/3 of the cheese mixture.
- Prepare the third layer with ladyfingers dipped in coffee.
- Top with the final 1/3 of the cheese mixture.
