Trip Details
Your intensive cooking vacation program will include 9 hands-on cooking lessons, with twice daily courses, except for on Thursday morning, when you instead visit the local market. Your host and Michelin-trained chef has over 30 years of experience in the restaurant and wine worlds. Originally from Denmark, his resume includes international experience, many years running his own restaurant, and membership to many esteemed French and European culinary groups.
Some of the topics you will cover include:
- kitchen safety
- seasonal menus
- traditional preparation methods and techniques
Itinerary
Day One
- Arrival in the evening and settle in to your accommodation.
- Welcome dinner tonight at the cooking school.
Day Two
- Light breakfast at your B&B or gite, then make your way to the cooking school.
- At 10 am start your Brittany cooking adventure with an introduction to the program, a discussion of kitchen safety, and a review of the menu for the week.
- Your first cooking class will follow, including making stock for the week. Light lunch to follow.
- Free time from around 2:30 pm to 6:00 pm, when you return to the kitchen to make dinner! Your menu will be based on what is available seasonally, and might include: artichokes in a citrus soup, chicken leg stuffed with langoustine in a mushroom sauce, a selection of local cheeses, and panna cotta.
- Dinner to follow and overnight.
Day Three
- Light breakfast at your B&B or gite, and make your way to the cooking school by 10 am.
- Your next cooking class will follow and might include such items as gazpacho and marinated turkey breast with a fresh salad.
- Free time from around 2:30 pm to 6:00 pm.
- This evening’s class might include grilled scallops with endive soup, veal fillet with roasted vegetables and crème fraiche potatoes, a cheese course, and lemon cake.
- Dinner to follow and overnight.
Day Four
- Light breakfast at your B&B or give, and make your way to the cooking school by 10 am.
- Your next cooking class might include pizza, smoked fish, and a cheese course.
- Free time from around 2:30 pm to 6:00 pm.
- This evening’s class will follow. Sample menu (will vary seasonally): grilled shellfish with garlic butter, Danish style meatballs, potato salad, cucumber salad, French cheeses, and tiramisù.
- Dinner to follow and overnight.
Day Five
- Light breakfast at your B&B or gite.
- This morning, a special visit to the local food market to select items for this evening’s class (you will need your own transportation to get to the market). You will also sample galettes at the market. If you’re still hungry, stop at a local restaurant for lunch on your own.
- Free time following the market visit until 6:00 pm.
- This evening’s class will follow. Sample menu: mushroom risotto, pan fried fish with lemons and capers, a selection of cheeses, and caramelized berries with cinnamon and poppyseed ice cream.
- Dinner to follow and overnight.
Day Six
- Light breakfast at your B&B or gite, and make your way to the cooking school by 10 am.
- Your next cooking class might include mussel and saffron soup, a caesar salad, and a cheese course.
- Free time from around 2:30 pm to 6:00 pm.
- Your last class will follow, and might include: lobster bisque, beef Wellington, oven-baked vegetables, a selection of cheeses, and poached peaches with sabayon and berries.
- Dinner to follow and overnight.
Day Seven
- Light breakfast at your B&B or gite, and departure on your own.

Excursions
- Local market visit on Thursday (transportation not included)
Transfer Details
- Transfers are not included but can be arranged from the local train station (Lamballe). However, we highly recommend having your own vehicle for this trip, so that you can explore during your free time and so that you can get to the market on Thursday.

Accommodation Information
Your home for your cooking vacation in Brittany will be either a local B&B or a gite, or guesthouse. Both options, although simple, offer common areas, en suite baths, and plenty of charm. The gites also have kitchen facilities. Although simple, the living arrangements foster the perfect environment for a completely authentic cooking holiday in Brittany, France. (Please note that breakfast is served at the B&Bs, while at the guest houses you will have supplies for a light breakfast, but you will have to make it yourself).
