Authentic Peru: Culinary Adventure in Chachapoyas
Join us on an utterly unique and authentic exploration of Peru. Journey into the Amazonas region and the Andes, and discover a remote, rugged, and stunning part of Peru in a cloud forest, which is not nearly as well known as the destinations in the south. But with its ancient roots in Andean culture and archaeological sites older than even Machu Picchu, there’s a magic to this part of the country that has the makings of a once-in-a-lifetime journey.
On your journey into subtropical northern Peru, you’ll experience the immense biodiversity of the region, as well as discover the lost civilization of the Chachapoya, known as “warriors of the clouds,” who were tall and fair skinned. Much of what is known about the Chachapoya comes from its conquerors, first the Incans, and later the Spanish. But amazingly, even though Kuelap was built between 500 and 800 AD, the walled fortress can still be seen today.
This tropical region was once an Inca settlement and later a commercial center; today it’s the hub of the agricultural area, and is known for its production of rice, sugarcane, and cotton, as well as alcohol and wine.
Explore the remote ancient and cultural sites, such as the unique sarcophagi of Karajia, a place only possible to visit by hiking or by horseback (take your pick!) All other transfers will be made in comfortable cars and mini-vans. Along the way, you’ll have English-speaking escorts — long-time collaborators of The International Kitchen — and stay in a variety of charming 3-star hotels as well as a hostel; all of which will prove a comfortable base for your exploration of this vibrant and beautiful region that words alone cannot do justice. (Please note: you’ll be in the magical cloud forest of the Amazonas region, not in the Amazon jungle).

- Welcome to the beautiful region of Chachapoyas! Your journey begins with a pickup from the Chachapoyas airport and a visit to the charming village of Huancas. Huancas is famous for its breathtaking panoramic views over the Sonche Canyon. Enjoy the stunning landscapes before heading to a recommended local restaurant, Batan del Tayta, where you can indulge in authentic Andean flavors (cost of dinner paid locally).
- Head to your accommodation, check in, and overnight.
Day Two
- Breakfast.
- Start the day with Chef Gabi and have a guided visit to the bustling Chachapoyas market, where you will explore fresh local ingredients.
- Following the market visit, head to the kitchen!
First take part in a Pisco sour class, learning to craft Peru’s national cocktail. - Next, experience an immersive half-day cooking class at Amazonika. Prepare four traditional Peruvian dishes, which you will enjoy for lunch afterwards.
- In the afternoon, enjoy a chocolate-making workshop, discovering the rich cacao heritage of the region and tasting artisanal chocolates.
- Dinner on your own, overnight.
Day Three
- Breakfast and check out, you’ll be transferring to your next home later today!
- First, this morning embark on a visit to Kuelap, the ancient citadel of the Chachapoya civilization, often compared to Machu Picchu. After a 1 hour 15 minute ride, you will arrive at the village of Nuevo Tingo. From there a cable car will take you to this magnificent archaeological site, where you will explore its historical wonders.
- After lunch at a local restaurant in Nuevo Tingo (paid locally), you will continue on to Cruz Pata to visit the Sarcophagi of Karajia, an impressive funerary site featuring pre-Incan burial sculptures carved into cliffs.
- Continue on to your next home, the Hotel Tambo Sapalanchan.
- Dinner this evening is included at the hotel.
- Overnight.
Day Four
- Breakfast at the hotel.
- Begin the day with a unique cooking class led by Paul at your hotel, the Tambo Sapalanchan.
- Engage in hands-on preparation of local dishes, followed by a delicious homemade lunch.
- In the afternoon, visit Molino de Piedra San José, a traditional stone mill where you will learn about local grain processing and its importance in regional cuisine.
- Dinner on your own. You might dine at Tambo Sapalanchan or walk into the village.
- Overnight.
Day Five
- Breakfast and check out.
- Travel to Cocachimba, a scenic village near the Gocta Waterfall. Upon arrival, take part in an engaging cooking class at Gocta Lab, where you will learn how to prepare Juanes, a traditional dish wrapped in leaves.
- Enjoy your creation for lunch while surrounded by the lush Andean landscape.
- Dinner on your own, either at GoctaLab or in Cocachimba.
- Overnight at the Gocta Lab Lodge.
Day Six
- Breakfast.
- This day is yours to enjoy at leisure. Choose between relaxing at the lodge or embarking on a hike to the majestic Gocta Waterfall, one of the world’s highest cascades. The hike can be done on your own, but if you want a guided to lead you, we can organize that on request for an additional cost. If you opt for the hike, be prepared for a rewarding 6-hour trek through cloud forests rich in biodiversity, with chances to spot the Andean spatuletail hummingbird.
- Lunch and dinner on your own today. (If you do the hike, the hotel can prepare a boxed lunch for you to take with you.)
- Overnight.
Day Seven
- After a final breakfast, transfer back to Chachapoyas airport for your departure, carrying unforgettable culinary and cultural memories from this unique journey.
