Elegant Burgundy

Situated in the south of Burgundy — a region well known for its wine — the historic city of Macon is only an hour and a half by train from Paris. The charming city offers a little bit of everything. In town, walk the cobblestone streets, along the River Saône, and through gardens. Architectural gems are abundant too, such as the 4th century Old St. Vincent’s cathedral, as the town was the hub of an active resistance, making it one of the first unoccupied towns in France during World War II. Outside of the city, the beautiful vineyards and wine estates produce a number of wines, most popularly ones made with the Chardonnay grape, that you can explore on our Burgundy wine tours.

Your personal guide into this slice of France is the wonderful and energetic Diane, as well as the owner of the chateau, Patrick. While Diane is based in California’s Napa Valley, she’s been leading trips to both Italy and France for more than a decade. When she’s not traveling, she can be found organizing private olive oil tasting parties — she’s a trained olive oil educator — and writing about food and travel for a variety of publications and sites. She’s made all the arrangements for your stay with the help of Patrick, including organizing the culinary and cultural visits and the Burgundy wine tours that vary depending on the season. With both Diane and Patrick on site during your stay, they’ll help ensure your trip runs seamlessly and that you experience all that you want to see and do during your time in Burgundy. Both Diane and Patrick will join you for all excursions, cooking classes, Burgundy wine tours, and meals, providing insight and stories along the way!

I had planned this to be the vacation of my life, and it really turned out to be so. Everything from the location to the food, to the daily outings were fantastic. Each meal was a discovery.

Trip Details

Your 4 morning cooking classes will be dedicated to learning about the regional cuisine of Burgundy. Join the chefs in the restaurant kitchen – usually either Chef Franz or Chef Arnaud – for a ‘stage’-like experience in which you participate in the restaurant’s work. While the chefs speak some English, Patrick will help explain some culinary terms that don’t easily translate, and Diane will be there to assists. Between the expert guidance of the chefs and Patrick, you’ll discover the some fabulous culinary tricks to craft classic dishes using what produce is in season. You’ll prepare such dishes as beef bourgeons, frog legs, and smoked foie gras. Not only will you get to enjoy the dishes you’ve created, but take home the recipes to impress your friends once you return home.

Itinerary

Day One

Please note this is only a sample itinerary. The afternoon excursions days 2-5 will be based on the season and the interests of the travelers.

  • Arrive at Lyon airport or Lyon central train station. A private car will transfer you to your enchanting chateau accommodations.
  • Your personal concierge for the week, Diane, has made you reservations at the restaurant of the chateau. (Cost not included).
  • Overnight.

Day Two

  • Breakfast.
  • Head into the chateau’s spacious kitchen for a hands-on 2-hour cooking class led by the restaurant’s executive chef. You’ll learn how to prepare a variety of classic French dishes, such as coq au vin using Bresse chickens, escargot, frog legs (if you like!), and crepe suzette. This is your chance to indulge your inner chef and cook in a real restaurant kitchen!
  • Both your lunch and dinner will be based on the creations you’ve made in class. Enjoy the dishes either in the dining room or, weather permitting, out in the lovely garden.
  • Each afternoon there will be a daily excursion arranged by Diane (transportation included). Today’s might feature Burgundy wine tours and wine tastings at some of the region’s boutique wineries. (If you opt to not go on the excursions with Diane, you can spend it at leisure, relaxing by the pool, going horseback riding, cycling, or you can schedule a massage.)
  • Dinner back at the chateau.
  • Overnight.

Day Three

  • Breakfast.
  • Your second cooking class led by the restaurant’s chefs, lunch to follow.
  • This afternoon’s excursion might be into the local countryside to see the medieval castles and quaint villages, including the Cormatin Castle.
  • Dinner back at the chateau.
  • Overnight.

Day Four

  • Breakfast.
  • Your third cooking class led by the restaurant’s chefs, lunch to follow.
  • This afternoon you might venture out to see a local cheese producer in the French mountains, the prehistoric Solutre rock, or additional Burgundy wine tours – it is France, after all!
  • Dinner back at the chateau.
  • Overnight.

Day Five

  • Breakfast.
  • Your fourth cooking class led by the restaurant’s chefs, lunch to follow.
  • Your afternoon might include a visit to the nearby town of Macon.
  • Dinner back at the chateau.
  • Overnight.

Day Six

  • Breakfast.
  • In the morning, depart the chateau with Diane and Patrick to explore a local and abundant street market, where many products from local artisans are featured. Lunch on your own.
  • Dinner on your own (Diane can make reservations for you at the Chateau.)
  • Overnight.

Day Seven

  • Breakfast followed by checkout.
  • Departure transfer to Lyon airport or Lyon central train station.

Accommodation Information

Situated among famous Burgundy vineyards – and just a short ride from the charming village of Macon – is your home for the week: a lovely 17th-century chateau hotel. The property features 21 spacious rooms with either a king or queen size beds; some rooms offer views of the surrounding park, and others the pool. Modern amenities include flat-screen TV, safe, mini bar, hairdryer, air conditioning, and Wi-Fi. The chateau also has a gastronomic restaurant, where your cooking classes take place, and the menu is crafted to focus on regional specialities using local ingredients as well as traditional cooking methods. When not cooking or exploring, relax by the pool.
