The hillside village of Pergo, home for your cooking vacation in Tuscany,  enchants. While the village is situated just four miles from the Etruscan city walls of Cortona, it feels like a world away, and not only because the town consists of a handful of medieval streets. Surrounded by rolling green hills – and even some mountains in the distance – Pergo is a place where nature, history, art, and gastronomic traditions have fused to create a breathtaking and relaxing getaway. When not learning the ways of traditional Tuscan food, delight in the picturesque setting populated by olive groves and vineyards. Pergo is only a short ride away from other charming towns such as Arezzo, Pienza, Perugia, Deruta, and Assisi, as well as from Montepulciano, which you explore on our Tuscany wine tours.

Nestled in the scenic region is the family-owned estate that will be your home away from home with its lovingly restored 18th-century historic dwelling. The owners respected La Corte dei Papi’s past, as they used antique materials in the restoration and conserved original elements, including vaulted ceilings with exposed beams and terracotta floors. Many of the hotel accommodation rooms feature a magnificent view of not only the garden but also the rolling hills of the region. The owner, David, and his mother will welcome you like family and show you the Tuscany of your dreams.

The second place we stayed for cooking was La Corte dei Papi. Wow just when you thought it couldn't get any better it did. David , Gabriella, Ivana , Slavan , JR, Giusseppi, Carla, and all the staff were amazing I would go live there if I could. The classes by Giuseppe and his staff were truly awesome . This is a trip I will never forget and truly loved everything about both places. I would give 10 stars if I could . Thanks for the choices you made . Also David made everyone feel like they were home not strangers Thank You David for being so nice and warm Our love to White the cat as well. And please give your Mom Gabriella our love as well.

Day One

  • Afternoon: a guided tour of Cortona with an English-speaking guide. Visit the Etruscan Museum, which includes a rich collection of objects found during excavations in the area. Then, a visit to the Le Celle Monastery, just outside Cortona, where Saint Francis spent part of his monastic life.
  • Time on your own to explore the town and dinner on your own. (Return transfer back to the hotel must be paid locally).
  • Overnight.

  • In your second cooking class, learn how to prepare traditional dishes, which may include bruschetta, pici hand-made Tuscan pasta with a red sauce, bread soup, Florentine beef coke entree, and mascarpone.

  • Afternoon on your own. Perhaps visit Trasimeno lake, or shop at the nearby Valdichiana Outlet, where most famous Italian fashion brands can be found. (Transfers can be arranged locally).
  • Dinner on your own.
  • Overnight.

  • After breakfast, depart for a full-day excursion.
  • In the morning, experience a guided Tuscany wine tour of Montepulciano, as well as a wine tasting in ancient cellars located underneath the town.
  • Light lunch in a local trattoria or winery.
  • In the afternoon, head to Pienza for a guided tour of the town. Next, stop in Val d’Orcia to see the cheese factory, followed by a delicious cheese tasting in the garden of the property.
  • Return to the hotel for an a la carte dinner accompanied by good house wine.
  • Overnight.

  • Breakfast.
  • Begin your third and final hands-on cooking class, which will be based on a seasonal menu.
  • Lunch to follow based on your efforts with local wine included.

  • Dinner on your own.
  • Overnight.

Day Six

  • Breakfast followed by a full-day excursion to Assisi. You will have a chance to explore this beautiful city on your own, including St. Frances’ Cathedral, a World Heritage Site decorated in frescos by Cimabue and Giotto, as well as other attractions, including St. Mary the Greater Church, the earliest religious building in Assisi. (Lunch on your own in Assisi). (If you would like to schedule a guided tour with a licensed guide, this can be added for an additional cost.)
  • In the evening, return to the hotel restaurant for a farewell a la carte dinner, including three courses, accompanied by good house wine.
  • Overnight.

  • Breakfast.
  • Check out and transfer to Terontola train station.

We enjoyed our experience at La Corte Dei Papi. The staff were gracious, welcoming and more than accommodating. It was clear their goal was to give us the best experience possible. The accommodations were well furnished, quiet and very clean. The chef, and his staff who did our cooking lessons was knowledgable and very patient, as we asked so many questions. He shared his cooking "secrets" willingly, and we had a great time cooking and learning. Overall it was one of the highlights of our trip to Italy.

The experience was outstanding. The location at La Corte dei Papi was fabulous; the owner, David, welcomed us and treated us to the best week of vacation that I have ever had. The hotel was first class and it felt like i was staying at a 10 star resort. Very homey and comfortable with touches befitting a venue that has been in David's family since the 17th century. The cooking classes were outstanding - the chefs at La Corte dei Papi, Guisseppe and Carla, welcomed us into their kitchen and taught outstanding recipes befitting the restaurant that they run. All we had to do was ask about how to make something else and they gladly showed and taught us. The small size of the classes (maximum 4 people) was outstanding, lending to great personal attention. The one cooking class at the winery Icario Vineyards was in a fabulous location and lent to the entire experience. Our guide on the excursions, Marianna, was very knowledgable of the area and the tours were just great. I celebrated my 50th birthday during the week and David, his mother Gabriela, Marianna and the entire staff made it a very memorable occasion!!!! I HIGHLY RECOMMEND THIS VACATION PACKAGE - it was definitely a dream of a lifetime. Leaving La Corte dei Papi on the last day was difficult, it truly felt like we were leaving a place that had become a home!!! Thank you David for the wonderful experience in Tuscany!!! All of the staff in Chicago were extremely helpful and knowledgable. Initially looking at the website in the summer of 2011, I couldn't find a week session that fit the idea that I had wanted to do. I was advised that this new program "Cooking and Vineyards of Southern Tuscany" was being added to the program list and was so glad that I waited to go to this one. The location and venue were top class, we were treated above and beyond any expectations that I had, I would highly recommend this program to all who want a first class experience and the specialized service from a small class size!!! We had a wonderful time taking Cooking and Vineyards of Southern Tuscany. It was perfect for two women. All of our trips were preplanned so we didn't have to rent a car or navigate. David of La Corte Dei Papi was a wonderful host and could not have done more to please us. We loved Giuseppe and Carla who were our chefs. They made wonderful, simple dishes in a small kitchen. Our translator Jemma (UK native) was a gem. We even met her mother and loved her sense of humor too. Our driver to Assisi and the cheese farm and vineyards was also pleasant and hospitable. Our only negative was the weather. We had cold rainy weather, and so we couldn't take advantage of the beautiful pool. I believe David was praying for sun since he wanted everything to be perfect. We loved our trip! It is the ultimate in low stress vacations to enjoy cooking classes in the morning, and then having a driver pick you up in the afternoon for an outing. La Corte dei Papi is beautiful inside and out. David and the entire staff worked hard to be sure we were enjoying our trip and every need was met. Giuseppe, Carla and Gemma provided terrific cooking classes - fun and interesting. We liked the classes being very small, as that gave us more hands on opportunities. I have already made two of the recipes we learned about in our cooking classes. The afternoon outings were well thought out and delightful. The full day in Assisi was wonderful - we needed a full day there! Because we prepared 4 course meals, we quickly learned to have two dishes for lunch and save two for dinner.
