2 Tbsp. olive oil
Pinch of salt
Hot chili pepper
6 to 8 cherry tomatoes
1/4 cup white wine
Brown the garlic with chili pepper and salt in very hot olive oil.
Clean the squid; pull off the head and remove the plastic-like spine. Then scrape the white stuff from the inside with your fingers. Rinse well.
Cut off the ends of the squid and then slice into small rings. Pull of any remaining white mucous-like stuff.
Sautee the squid until it is opaque. Add cherry tomatoes and mash. Reduce again for about 10 minutes. Sprinkle with parsley.
