Tuscany Cooking Vacation: Recipes from Chef Claudio

Tuscany cuisine is known for its simplicity, particularly since it relies so heavily on fresh and flavorful ingredients. This is especially true in the kitchen of Chef Claudio, a passionate chef who has led our all-time best-selling cooking vacation "A Classic Tuscan Table with Chef Claudio" ever since Karen founded The International Kitchen in 1994.

Tuscan cooking classNo one ever goes home hungry after a stop in Claudio's restaurant. While many places throughout Italy will begin with a starter followed by a pasta, then an entree, and then a dessert, at Claudio's you'll be getting a couple of everything!

While nothing compares to a cooking class with Claudio and enjoying his recipes either in his restaurant or poolside, you can recreate some of his dishes at home. These are a just a very, very small sampling of the kind of things Claudio makes, as his recipe book is made up of hundreds of pages, literally.

Onion Frittata recipe
One particular recipe that highlights the simplicity of Tuscan cuisine is Claudio's frittata di cipolle (onion fritatta). This dish can serve 4 people and either be a part of breakfast or a starter to lunch or dinner.

Ingredients
4 eggs
1 red onion
2 tbsp olive oil
Salt

Directions
1. Slice the onion thinly, and sautee until the oil is transparent.
2. Beat the eggs together with the salt.
3. Add the eggs to the onions and cook at low heat.

TomatoesPenne with spicy "carrattiera" sauce recipe
Pasta is a must in any Italian menu, no matter what the region. This penne alla carrattiera dish is perfect for August when tomatoes are ripe and in season.

Ingredients
4 garlic cloves
4 small whole dried red peppers
4 tbsp olive oil
Bunch of parsley
8 tbsp peeled crushed tomato
Salt
400 grams penne pasta

Directions
1. Mince together the garlic, parsley, and dried red peppers, and then sautee in oil.
2. Add the crushed tomato, and salt to taste. Cook about 3 minutes.
3. Add the pasta (which has been cooked in salted water). Toss together.
