Amalfi Coast A Mediterranean Cooking Experience at Relais Oasi Olimpia | Read
more... | From the moment we arrived, the service was exceptional. We ... found our suite (Sorrento, I believe) incredible! The room was appointed with beautiful antiques and fantastic views from the veranda! We were in heaven. We met Ermelinda, and she was fantastic throughout our stay. She assisted in every aspect of our stay. She remained very pleasant, courteous, and very 'on top of things'. The service at the hotel by everyone was the best that I have ever experienced. All meals were filled with the freshest ingredients (from the organic garden on the premises no less--I absolutely loved this) and everything that we tasted has left a lasting memory for us. I have come home and cooked several [dishes] already! Chef Gennaro was incredible in the kitchen (the facility again exceeded expectations), he has such passion for his cooking that I still can hear some of his words of wisdom, "You cook with your eyes, your smell, your taste, and touch; but most of all, cook from your heart". Both my husband and I feel that he has great potential to do unbelievable things. He also has a wonderful sense of humor and was very funny, in English! There was not one thing we made or prepared for us either with him or by him that we did not feel was excellent. We absolutely loved Antonio and Rosa when we were allowed to help make mozzarella cheese and limoncello. Our lunch at their home felt like we were their family. Antonio's father came out to the lemon grove and let us taste the fresh lemon juice with a little sugar. We purchased the olive oil and had it shipped back. It is amazing! Our tours to Positano and Ravello were incredible. We were both so thankful that we had a driver arranged for us because the roads were so tortuous! Fantastic views and very breathtaking. Our [excursion to] the island of Capri was an unbelievable journey... I have to say that the restaurant in Sorrento was not as good as Chef Gennaro at the Olimpia!
Obviously you can see that I considered this trip the very best I have ever taken!! My husband and I have been to many places, but this was so very special. The week was so memorable that I actually cried leaving. I hugged the owner. I felt so thankful that he had created such a place. I (personally) also loved his dog (Mia, neopolitan bull mastiff)--I was a little homesick for my own dogs. She was so sweet. I would see her daily. There were no negatives about our stay at Relais Oasi Olimpia. I would go back in a heartbeat!! There was some discussion about an advanced course...Please keep me posted, I would come! Thank you for the best cooking experience I have ever had! Sincerely, Alida (Dolly), MO |
Authentic Amalfi Cuisine at Villa Romana | Read
more... | Well, now that we are home, I can tell you it was very simple to get cash in Minori...there was a bank with a 24 hour machine just a short walk away, as was everything else. What a wonderful learning vacation we had...We can't say enough. And anyone who thinks this is the wrong season to go there is horribly mistaken. The weather was like our spring, and there were no crowds to contend with. The people there were amazing. Exio, Sandra, Guiliano and the family and staff at the Villa Romana. We felt like sponges absorbing all the information, culture and cuisine we could get for our senses. Thankfully, the four pounds I gained from the wonderful food have gone, but the memories never will. We took over 3000 photos...a lot of them are of the food preparation and serving...as well as of the amazing views taken on our many hikes. Thanks so much...we can't say enough. My husband, who has captive audiences all day long, has been raving non-stop ever since.

We thoroughly enjoyed our stay in Priano, Amalfi, Italy. Everyone at the Tramonto d' Oro hotel was professional, friendly and welcoming. They went out of their way to ensure we were properly treated. The cooking class was exceptional. We only had time for the three-night class but still got a lot out of the experience. We can now feel confident in making Sicilian type pizzas, pastas, cakes and cookies. The two different chefs we worked with in their immaculate and well equipped kitchen (complete with a window that looked out on the ocean) were excellent their lack of English and our total lack of Italian was more than made up for by Irina, one of their front desk staff who worked with us to translate to ensure we knew what the chefs wanted us to do. ... The cooking class area was large and well equipped. Mamma, the owner of the hotel, personally dropped in on each class. The hotel also arranged great morning excursions to Ravello and Amalfi one day and boat trips to the Blue Grotto and Positano on the second day. Both trips were very educational and interesting. Our guide to Ravello and Amalfi was particularly well qualified and entertaining. The one thing that your ad did not do was adequately describe the beauty and comfort of the hotel and rooms. Each room had adequate space for luggage, comfortable beds, clean bathrooms and a beautiful balcony with an unmatchable, spectacular view of the sea. We would recommend the trip to anyone.

Ravello - Lesson with Chef Vincenzino | Read
more... | Vincenzino was such a delight to spend the day with. We feel that we really learned a lot about the whole "mealtime experience." The conversation throughout the day was enjoyable and truly taught us about Ravello, cooking Italian food in general, and how to adapt recipes at home. It was fabulous having the meal served to us on the terrace, enjoying a bottle of wine and savouring the food we helped prepare. I loved the fact that Vincenzino wanted to ensure that we knew how to prepare the meals at home without his supervision. We wrote down the recipes, filmed some of the class and have since cooked 3 of the recipes at home in Canada. After the class, we walked back to Minori using Vincenzino's recommendations... A fabulous day and something I would highly suggest!
We would book another class with Vincenzino. It was a highlight of a wonderful trip to Italy! Tania N., Canada |

The minute we arrived at the hotel (by a private driver in a mercedes) we were instantly greeted by the staff at the hotel - they were very hospitable and wanted us to be as relaxed as possible. We had such a wonderful time working with Chef Gennaro and his staff....the food was outstanding and we have been able to cook the same meals at home....simple and very tasty! We would go back in a heartbeat and learn more if possible....I guess we will do that next time! Again, we would recommend him to anyone...thank you for an outstanding meal and experience!!!

more... | Our driver, Luca, was very helpful and friendly. We enjoyed making pasta and hope to try it at home if I can ever find a long enough rolling pin. The guided tour of Bologna was very interesting and the dinner that evening was wonderful. However, we were still full from our large late pasta lunch to be able to eat such a large dinner. Early the next morning, we met to see how parmigiano-reggiano cheese is made. That was extremely interesting! The class that followed was fun, informative, and relaxing. The following morning was the Ferrari Gallery, and then the gorgeous Villa San Donnino. The making of traditional balsamic vinegar was extremely interesting and tasty. The owners of the villa were truly kind and inviting people. We enjoyed everything we did on this tour with the exception of the Ferrari Gallery. I would have rather had free time or something food related then to have gone to the Gallery to look at old race cars. I have no interest in cars or racing.

Sicily Amore Siciliano | Read
more... | Katia & Ronald are excellent coordinators and provided language
interpretation whenever needed. The excursions they arranged were
likewise interesting and worthwhile. We cooked with different chefs
at various locations, which was different from our experience last
year when we were with Carmen Mazzola the entire time at Oasi
Olimpia. There are pros and cons with each approach and we enjoyed
the opportunity to experience the different approach and specialties
of the various chefs. We did not do as much of the actual food
preparation and cooking as we did last year; the chefs and their
assistants did most of it, so the experience was not as "hands on" as
we would have liked. This varied by chef. The Agriturismo where we
stayed was very nice and recently renovated. The rooms were not air
conditioned, but we did not need it since the weather was cool when
we were there.
Good information was provided. What we did not have were the recipes
that we prepared. Katia mentioned that the chefs would provide them
afterwards based on whatever we prepared, since they did not have a
standard group of dishes used for the classes. We did receive the
recipes after we returned home. The disadvantage to this approach is
that we could not take notes on the recipes as we prepared them.
Taking notes the previous year proved to be very helpful when we
returned home and tried the recipes.
The International Kitchen staff [was] very helpful staff, as usual.
We look forward to an additional experience in 2008 in Tuscany and /
or Umbria.

more... | The trip definately exceeded every expectation. It was exactly what I was looking for....a combination of the cultural aspects coupled with some cooking and tasting of local fare. Angela did an excellent job in putting together a sampling of all areas of Sicily. It was her goal to introduce us to all that Sicily has to offer so that the next time we visit, we will be able to zero in on the areas that we liked the best. All of the participants (restaurant owners, guides, private home chefs) were all extremely gracious and very professional. Our private driver was the most wonderful man. He was patient and understanding and had such a gentle personality. We felt very safe with him. He made our experience that much more wonderful. Each of the guides was fantastic!! Each was very knowledgeable in their area of expertise and each conveyed the lessons and information in a way that we could all easily understand and learn. Each of the chefs was wonderful as well. Each was very patient, very gracious and passionate about what he/she does. Doing Sicily on my own, with my mother, would have been very overwhelming and I would most likely have missed alot of what I had experienced with this tour. It was the perfect trip! The accomodations were incredible also! I loved every second of this experience and I thank you! I will most certainly be investigating future trips with your organization. And I will recommend your organization to all my friends and family.
Peg and Karen were most helpful during the initial investigation of the trip. Each took their time in explaining the various options so that I could make an informed decision. Karen was also most helpful in booking my airline and for that I thank her. Your staff in Sicily ... were all incredible!
It would have been nice to stay in each locale for two days but then you would have to extend the entire timeframe for the trip I think. We would have loved to enjoy each locale for just a bit longer (Erice, Siracusa/Ortygia, Caltagione, Taormina, Cefalu, and Polizzi Generosa) All of these places were fabulous! I would have loved to have stayed in each longer, but I think the idea is to introduce us to each place and have us come back for longer periods in the future. Thank you again. Jamie, WI |

more... | I had a wonderful week. Chef Claudio and all his associates as well as your International European Partners were exceptional. All the tours were fun, well thought out with informative guides. The dinners at Casa Grande were also a wonderful experience. The food was exceptional every night... For as busy a business man that Chef Claudio is he was very giving with his time and was a lot of fun to work with in the kitchen. I do not think I could have asked for a more wonderful group of people to be in a class with. We just seemed to hit it off from the very beginning. I know you cannot control that, but the people I met were wonderful and I would do a trip with them again any time. All of us were there for different reasons and certainly [had] different comfort levels in the kitchen, but that did not matter. Chef Claudio made us all feel like were were successful. Everything was "Perfetto" whether it was or not we had a great time making everything he would let us tackle. It was definitely the right class for me and I could not have asked for a more perfect way to kick off my retirement.
You have a wonderful staff in Chicago and Europe. Everyone really made me feel important and I know you have hundreds of guests every year so it would be easy for a single guest like myself to get lost in the crowd, but that did not happen.

more... | First was the people. Claudio, Sabrina, Laura, Miguel, Ahmed, and Joe the dishwasher all received us with open arms as if we were friends for years. The 10 participants in the other program became close friends in a mater of minutes. They ALL were great to work with, eat with, drink with and laugh with. Second was the location. Figline is a quaint town with Claudio’s restaurant located in the town's main Piazza. Claudio’s cottages located in the Tuscan hills with sheep, chickens and some of the freshest vegetables used in our cooking class. The wood burning pizza oven located on the farm topped the cooking experience of Tuscany. Third was the food and wine. Claudio used the only best ingredients and the best wines for our class. He would ask us what we wanted to cook and had no problem getting those ingredients no mater if it was chicken or steak. Lastly is how all three elements blended to make this the most memorable trip to Italy we have ever had.
The Chicago staff was complete and knowledgable. I have no suggestions to improve.

more... | Diane and I enjoyed the week spent at Villa Bianca for many reasons. The intent of the trip obviously was the cooking school conducted by Chef Luca and his assistants Guido, Enzo and Sandra. The class size was a manageable 8 people who all participated in the food preparation. We learned several meals, sauces, desserts, pates and appetizers most of which we have tried successfully upon returning home. Chef Luca, with Sandra's personalized interpretation, was thorough in his presentation and instruction. His manner was always friendly and inviting and he explained in minute detail so all could grasp the technique.
To me though, Friday, or pizza day, was the best. The class size had dwindled to three and the presentation was given at the restored mill owned by the restaurant owners Roberto and Roseanna. By now we were a family and although the formality of the lesson remained the beauty of the setting, the weather, the friendship and the language summed up a week of enjoyment for us.
The side trips to Siena and San Gimignano were a great exposure to medieval Italy. A great experience!

more... | Thanks to your research you found an outstanding cooking school for our group
in beautiful Tuscany. We had a marvelous experience, not only in developing and
refining our culinary skills, but enjoying wonderful accommodations and the gorgeous
countryside of this 750 acre estate.
We were truly treated as part of family by our hosts, the Pelligrino family. They were
attentive to our needs and desires in all respects, taking time to visit with us during
cooking school and at almost every meal we had on the property. They skillfully coordinated
offsite transportation to nearby cities with drivers who spoke fluent English and who
understood and skillfully explained local geography, history, and agriculture.
We thoroughly enjoyed our chef, Gabriella, who was skillful in her artistry, very desirous
of pleasing us, full of humor and one who teaches well in a participative setting. Her
assistant, Claudio, anticipated her needs and supported beautifully, especially in serving
the fruits of our labor.
As a group of eight we cooked in two kitchens on the property. The Inn kitchen was small,
dark and poorly ventilated. The Castle kitchen was spacious (yet would not accommodate a
group much larger than ours), light and airy. The oven here was not working well. The knives
used for preparation were old and, sometimes, not sharp. Despite these criticisms, we cooked
some of our best Tuscan eating in this beautiful setting. The long term success of this school
will be dependent upon the building of a properly designed and equipped kitchen to accommodate
specific sized groups.
We were impressed by the quality of the produce, meats and spices brought to our cooking table
each day. A trip to market to experience where and how locals buy
what they cook might be an interesting side trip.
We hope these comments will be helpful ... Thanks for all you did to make this
trip a lifetime memory.

The kitchen at Villa Bordoni was arranged perfectly for classes with such an open floor plan. We had 3 different chefs, all of which were entertaining and informative. Our meals were deliciously filling and rewarding. Our rustic farmhouse cooking class reminded us that Italian cooking is defined by the local flavors and ingredients based on the seasons. Yum, we can still taste the freshness. We can't speak highly enough of the staff at Villa Bordoni and International Kitchen guides. They were courteous and accommodating, and made our experience a truly personal one. David and Katherine Gardner impressed us with their beautiful villa, attention to detail, and kindness. David impressed us with his 1000 year old dungeon turned wine cellar. We appreciated Katherine's ability make us feel at home in their Villa. We feel that we made friends during the week.
The International Kitchen staff was great. Each of our guides were friendly and courteous, and punctual. They shared their personal stories that made the picturesque scenery even more meaningful.

more... | First let me say that Chef Claudio, Daniella and Sabrina were wonderful and thoughtful throughout our stay. We had a wonderful experience and would highly recommend it to anyone. Our first night eating at the restaurant was a shock - the quantity of food (5 courses) was intimidating but each dish was so delicious that we ate the whole meal from beginning to end. The experience of several courses of delicious food was repeated throughout our stay. The instruction was thorough and well thought out, clear to understand and every participant had abundant hands-on practice. Chef Claudio has a very even temperament at all times, he was very patient with us and made everyone feel comfortable and relaxed with our assigned tasks. He was eager to demonstrate techniques and discuss the "why and where" of ingredients and techniques. His garden was the source of many items we cooked. I think his favorite phrase was "Perfetto". Our cooking partners, who we met on our first day, were delightful. I expect to maintain friendships with several people we met at chef Claudio's for many years to come. The B&B was surprisingly modern and comfortable for an old Italian Estate, although we had to get used to the small "tub" in the bath. The grounds were hilly and planted with olives, grapes, pomegranates and a garden of bounty. We collected mushrooms in the woods on site for a couple of the dishes we made (delicious). The place gave a feeling of the Italian countryside. The pool was fun and well-used by all the class participants. The temperature was wonderfully warm for May. The B&B is well located for day journeys into the Tuscan countryside and we took advantage of that with trips to nearby ancient castles and towns and exploring Chianti wine country. I should say that driving the narrow roads around Figline Valdarno can be perilous…
All my questions and concerns were immediately addressed by the Chicao staff in a very courteous and friendly way. Robyn, in particular was wonderfully informative and responsive (Thanks Robyn).

This class was one of the highlights of the trip, absolutely wonderful, I enjoyed every minute. Loved learning about the history of the local Tuscan cuisine, local fresh ingredients, the hands on preparation and delicious menu. The location and decor of Cecilia and Massimo's restaurant was clean and beautiful, and Cecilia was an excellent teacher, nice, charming and she spoke wonderful English. Learned a lot from Massimo when he gave us a wonderful informative presentation and tasting of olive oils and wines of the region. The food we prepared - Tuscan tomato bread soup, bruschetta, Drunken pork and almond biscotti were so delicious... I would highly recommend this class!

Venice - Lesson with Chef Maria Grazia | Read
more... | Maria Grazia was wonderful. Her home was such a surprise in Venice. We didn't expect such a spacious beautiful place. We were definitely glad to have rented one of her rooms. Her cooking course was wonderful. We learned so much on how to prepare and clean sardines, squid, vegetables. Everything was hands on which we really enjoyed. She was really accommodating too. Since we had already made fresh pasta with our cooking class in Tuscany, she switched her menu to show us how to make risotto instead. Maria Grazia's English is not as strong but she arranged one of her friend to come and translate for us. That was a really nice gesture.

Umbria All About Umbria | Read
more... | I am a travel agent and this is the sixth trip our group of women have taken with The International Kitchen, and each one is better than the last. This was our first time in Umbria, and it was wonderful! The hotel is lovely and Filippo and Mama Giovanna really go out of their way to make sure you have a great time. If you don't know about Umbrian food and wine, it is so good! And shopping for pottery in Deruta is the best.
The International Kitchen, as usual, did a wonderful job for us. It is really great to find a tour operator that you can totally trust.

Assisi Cooking at Alla Madonna Del Piatto | Read
more... | Our experience was wonderful. The agriturismo was lovely and our hosts very gracious. Visiting the market and tasting various items was helpful interesting and helpful. The cooking classes were very well organized with lots of hands-on. Letizia's English is excellent and she is a very good teacher. We made two things in the first class and three things in the second class, but she also gave us lots of information and suggestions for making additional items. The weather was warm and they have a wonderful terrace where we had our lunches. Her kitchen is very nice and set up well for classes. One of the things we appreciated most was that Letizia sent us several menus, well before we went to Italy, and had us choose the things we wanted to learn to make. If we were to make any suggestion, it would be to offer bottled water to their guests. The water is full of minerals and does not taste very good. We would recommend Letizia's classes to anyone wanting to learn cooking of that area.
[The program packet] was complete and the maps and directions were excellent (although slightly intimidating the first time we make the drive to the agriturismo). After we had driven there once, it was easy.

Cooking and Walking in Umbria and Tuscany | Read
more... | The entire tour was thoroughly enjoyable. I arranged the
trip and brought my husband along; he wasn't exactly sure what he was
in for but upon arrival he expressed pleasant surprise and was
impressed immediately by the accomodations. What a view we had from
our room! Soft rolling hills and a herd of baa-ing sheep guided by a
sheepherder. The rain did not deter us one bit from the walking and
exploring although it did limit the view when the fog came in.
[...]
The very best part of this adventure were the excursions and
coordination that we could not have planned on our own, lacking
familiarity with the smaller towns and out-of-the way, specialty
restaurants (every single meal was spectacular). Thank you for putting
together such a great program. We had planned and saved for our 10
year anniversary celebration for over two years...
Thank you!

more... | The Ca that we stayed in in Piegaro was wonderful! So beautiful and peaceful. The staff was very friendly and accomodating. We had been unable to recharge our digital camera batteries, and they were able to locate one that we could borrow. Our guide, Gianni was terrific, so knowledgable and kind. He was very solicitous of our needs, letting us doze in the car after lunch and not talking when we wanted to rest. The itinerary was just what we were looking for and we are ready to go back and explore the area some more.

Essence of Umbria | Read

Our experience could not have been better. Our hosts at Genius Loci were absolutely wonderful, and the views and feel of the Umbrian town of Bevagna were so authentically Italian. After a long week of work and a flight from Chicago, the quiet and relaxing atmosphere of the Umbrian countryside was just what we needed! Unlike many other sites that we have visited in Europe over the years, Bevagna and its neighboring hill towns show hardly any traces of “Americanism” or herds of tourists overcrowding every site. Yet it still had all of the comforts of an American hotel, and our hosts went above and beyond to insure that each of our days went smoothly with dinner reservations, directions, etc. Bevagna had a very close proximity to many other charming medieval towns, we saw a different one each day! The renovated Umbrian building that we stayed at has a fascinating history, in addition to the family’s long tradition in the wine and olive-oil business. We had a wonderful afternoon cooking with Mary, and learned a great deal! They also allowed us to utilize the kitchen two evenings later and cook ourselves another meal, it was great! This was my third trip to Italy (the second for my wife), and we can both honestly say that this was the first time that we had a true “Italian experience.”
Thank you for everything! As an American who has been to Rome previously, I was very apprehensive about renting a car and driving on Italian roads to Bevagna. But you were completely correct in assuring me that the drive would be fine. Drivers in the countryside were courteous, and I never felt unsafe or nervous. Also, the people at the rental site (near the airport) were very friendly and helpful.

more... | Dear Filippo and "Mamma" Giovanna,
Just wanted to let you know how much I enjoyed my cooking school experience with you and your delightful family in Spoleto... It really was a very special vacation, what a wonderful way to live in a smaller Italian town for a week, have personalized cooking instruction, and see so many interesting places with a guide and good company. Your hotel was in a great location and the service was terrific, especially Marco at our dinners. I really appreciated all your help with making this such a pleasant visit for me.
Best wishes to you and your family,

Cooking With Giuliano Hazan | Read
more... | I have just returned from a week at Villa Giona and the school with Guilano Hazan. How did I like it? I told him they could raise the prices and it would still be a bargain! It was one of the most memorable events of my life. It was so much more that just a cooking school. It was a wine, food and cultural experience of a lifetime. I am a caterer, so my knowledge of food and wine is perhaps greater than the average cooking enthusiast. I was not disappointed in the level of expertise and knowledge of everyone involved. Marilisa Allegrini and Guiliano Hazan were wonderful teachers. This was also the first time I had gone on a trip such as this by myself. It was such a wonderful experience that I plan to do it again. The group that attended the school bonded into a wonderful family for the week. Guiliano mentioned that he would like to have an "alumni" course and I would definitely attend that course. I am planning on traveling to France next year and plan on another wonderful culinary adventure.

more... | We met with Chefs Maria and Sebastian. My daughter in
law and I were thrilled with our "cooking lesson" that included a trip
to the Rialto fish and produce market, and the incredible meal we help
to prepare that completed the day. Both Maria and Sebastian were
cordial, instructive and made our lesson a memorable experience. The
next time I planned a trip a "cooking lesson" will be number one on
the ajenda.
Please extend my thanks and grattitude to Chefs Maria and Sebastian for
making this the highlight of our trip to Venice. Beth B., MA |

more... | We met the interpreter at the Venice fish market and we loved the tour of the markets. It was a great experience to cook in the Chef's home, I always get a better feel of a place when I see how the natives live. Patrizia and her husband have a lovely home and were generous and welcoming. The presentation, explanations, and menu were superb. The fish we cooked was very fresh, the meal was delicious and we were treated to lemoncello and grappa. The chef and interpreter were friendly and personable, they made us feel welcome and comfortable. I would definitely take another class should the opportunity arise and recommend your classes to friends who travel.
Thank you for your wonderful service! It was a highlight of our trip to Italy to be able to interact with locals, in their home, like visiting family. The meal we cooked ourselves was as good as any we had in restaurants and it was much more fun learning about the culture of the food as we cooked and ate it than just picking items off a menu. The cooking class was a great way to partake in the life of Italy than just touring around looking at the pretty sights of Italy. Stacey H., NJ |
